Lemon Drizzle Cake
Calling all lemon lovers. This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.
This cake uses the whole lemon. The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing. You will definitely enjoy the lemon flavour right throughout the whole cake.
A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour. It's so easy to make and the perfect cake to share with others without it being too sweet.

Lemon Drizzle Cake
Ingredients
· 150 grams caster sugar
· 150 grams self-raising flour
· 2 eggs
· 3 tablespoons milk
Lemon sugar syrup
Lemon icing
Instructions
1. Preheat oven to 180°C.
2. Grease and line a loaf tin with baking paper.
3. Cream butter and caster sugar until fluffy and pale in colour.
4. Add eggs, sieved flour, milk and lemon zest and mix well.
5. Spoon mixture into lined loaf tin.
6. Bake for 30-35 minutes or until skewer comes out clean.
7. While the cake is baking, prepare lemon sugar syrup by placing caster sugar and lemon juice (remembering to reserve 1 tablespoon of the lemon juice for the icing) into a small saucepan over medium heat until sugar is completely dissolved. Set aside.
8. Once cake is baked, poke holes into the hot cake using a skewer and pour the lemon sugar syrup over the cake and allow it to cool completely.
9. Mix icing sugar and reserved lemon juice and spread over cooled cake.
Optional - add lemon slices and zest to decorate the cake.
Tips
· 3 lemons can be used to add more lemon flavour.
· Sugar can be substituted for caster sugar.
