Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Striped Vanilla Cake

When the sweet and talented Brittanie @brittanie.bakes on Instagram was hosting a striped cake collaboration, I thought this would be the perfect time for me to attempt making my first striped cake. Be sure to check out #stripedcakecollab over on Instagram to see all the amazing striped cakes created. I recently purchased some new piping tips and it come with some small cake combs.  I didn't realise that it wasn't the striped cake comb that I needed until I was about to decorate the cake.  So, instead I used the technique of piping one colour followed by the next colour and alternating it until I reached the top of the cake. I was pretty happy with how my striped cake turned out.  The stripes are not perfect but I was wrapped with my first attempt. This Striped Cake is made of vanilla cake.  The cake layers are filled with delicious Swiss meringue buttercream and raspberry jam. Chocolate Swirl Cake

I was excited to make this chocolate swirl cake for a sweet girl who was turning fifteen.  She requested this type of cake.  I haven't made a marble cake in forever, so it was nice to make it. I was really happy with this recipe as the cakes come out pretty much with flat tops.  Making it perfect for icing and decorating.  But this means no leftover cake to make cakesicles or cake pops. First time making chocolate Swiss meringue buttercream and it's so delicious and smooth. This Chocolate Swirl Cake is moist and has a delicious chocolate swirl throughout the vanilla cake.  The chocolate swirl is made of chocolate not cocoa powder, making more decadent.  Not only is it covered in delicious chocolate Swiss meringue buttercream between the layers but the whole cake is decorated with this smooth buttercream and finally decorated with sprinkles. Easy Chocolate Chip Cookies

If you're searching for a delicious and easy chocolate chip cookie recipe, this recipe is the one for you to try. These easy Chocolate Chip Cookies are so yummy and delicious.  I challenge you to just eat one.  I definitely failed this test.  They are slightly crispy on the outside, soft and chewy on the inside and full of choc chip goodness. What I love about this recipe is that you can make giant cookies or regular sized ones.  When making giant cookies use 2 tablespoons of cookie dough and for regular cookies use 1 tablespoon of cookie dough.  Very important to leave space between the cookies on the baking trays as they do spread. Mini Brownie Cheesecake Bites

Brownies are one of my favourite baked treats to have and in mini form, they are so yummy.  The other ingredient I also love is cream cheese frosting.  So these mini brownie cheesecake bites are the perfect combination of both. These Mini Brownie Cheesecake Bites are so fudgy and delicious with the cream cheese filling that it's hard to just have one. The cream cheese filling goes so well with the chocolate fudge brownie. They are so easy and quick to make as a sweet treat for any brownie lovers. I found that not all the brownies were easy to remove from the mini cupcake tins, even though the tins were sprayed with oil.  I think next time I might try baking them with the cupcake liners. Buttercream Drip Cake

This Buttercream Drip cake is made for a super special Mother's Day collaboration over on Instagram, organised by the beautiful Sasha @ohlalaboulangerie and Joana @sweets_by_joana Be sure to check out #GlobalMothersDay2019 and #DulceDiaDeLaMadre2019 for all the wonderful creations from bakers over all the world in celebration for Mother's Day. I decided to try out this beautiful buttercream drip technique that was done by my beautiful friend Lindsay @staysweetnyc I absolutely love the way it turned out.  It was so fun piping all the rosettes and using the various piping tips. I really enjoyed mixing the different coloured buttercream.  I was like a kid in a candy store seeing all the beautiful buttercream colours. This Buttercream Drip cake is made of moist chocolate cake layers.  Not only is it covered in delicious Swiss meringue buttercream between the layers but the whole cake is decorated with this smooth buttercream using different piping tips. Pink Fault Line Cake

When the lovely Teresa @little_poppy_cake organised a #pinkcakecollab over on Instragram, I couldn't help but take part.  You all know that I love a touch of pink in my baking. This was also a great opportunity for me to try out a new cake technique that is currently trending.  I couldn't find a name for this technique.  Basically, there is a cracked section which you can leave exposed or add some sprinkles to it. I also decided to make Swiss meringue buttercream and boy is it so good.  This style of buttercream is so smooth and not as sweet as the traditional American buttercream.  It takes a bit more effort but it's so worth it. This Pink Fault Line Cake is made with super moist chocolate cake. The cake layers are filled with delicious Swiss meringue buttercream. Finally, the whole cake is also covered with this smooth buttercream and decorated with cute pink sprinkles. Ice Cream Cakesicles

I recently did another fun collaboration with my sweet friend Tiffani @tiffani_triedandtested over on Instragram. The theme for this collab was ice-cream.  So, I decided to make Ice-cream Cakesicles so I could try out my new ice-cream moulds and also try out some products that the lovely team at @queenfinefoods sent me. These Ice-cream cakesicles are made with delicious coconut cake & are covered in white chocolate.  The ice-cream drip is decorated with pretty sugar strand sprinkles.  The eyes, mouth and cheeks are drawn on with writing icing. Tiffany Inspired Pattern Cake

In this recent Pattern collaboration on Instagram, I was inspired by a gorgeous Art Deco design by Tiffany & Co. When I saw this design in their Blue Book 2014, I was in love with the beauty of the bracelet made of diamonds and sapphires.  The architectural circles showcased the sapphires beautifully. I decided to re-create the circle design on my cake.  This proved to be more difficult than I first thought.  With my limited cake decorating skills, I decided to used royal icing to create the circle design around the cake. This Coconut Cake is simply delicious with a hint of desiccated coconut through out the cake layers.  There is also a surprise creamy custard in between each layer of cake as well.  It's covered in a sweet American buttercream.
