Basque Cheesecake

  If you love cheesecakes, you definitely need to give this recipe a try. This Basque Cheesecake is so smooth and creamy and the best part is that it is easy to make. The worst part is having to wait for it to be refrigerated for 4 hours or overnight for the flavours to develop but the wait is so worth it. This recipe can be made using the oven or in the air fryer. I have made it both in the oven and in the air fryer. Gingerbread Christmas Tree

With Christmas just around the corner.  Don't Buy It, Bake It! I'm sure you have family and friends who would love to receive a baked gift especially made by you this Christmas. The lovely team at @Darrelllea recently sent me a variety of their delicious products to do some Christmas baking.   These Gingerbread Christmas Trees are so cute, fun and easy to make.  There is also hidden surprise treats in between the layers of gingerbread cookies when you break the cookie open. Ps. I couldn't bring myself to breaking it open so I took a photo before attaching the top of the trees with royal icing. Mini Unicorn Gingerbread Houses

I'm excited to be taking part again this year with #25daysofcollabs on Instagram with some amazing bakers to celebrate this festive season.  Each day since the start of December, different bakers have been involved in creating a bake from different themes. This year I've picked three themes to be part of.  The final theme is - Gingerbread Houses.  Last year I had so much fun making my first gingerbread house, so I decided to make another one this year.  I decided to make mini gingerbread houses that can sit on the side of mugs.  I didn't want to make the traditional houses so I turned them into unicorns. These Mini Unicorn Gingerbread Houses are so cute and fun to decorate.  They make great gifts for any unicorn or gingerbread lover.  They are decorated with royal icing and sprinkles to make them festive for Christmas. Christmas Gingerbread Wreath

I'm excited to be taking part again this year with #25daysofcollabs on Instagram with some amazing bakers to celebrate this festive season.  Each day since the start of December, different bakers have been involved in creating a bake from different themes. This year I've picked three themes to be part of.  The second theme is - Christmas Wreaths.  I had a few ideas in mind for this theme but I decided to create a gingerbread wreath for it.  It was fun making all the different snowflakes cookies and decorating it before putting it together on the wreath. This Christmas Gingerbread Wreath is made of various sized gingerbread snowflake cookies and decorated with royal icing.  It's a fun bake and the best part is you can eat the whole thing.  This gingerbread wreath makes a great decoration piece for Christmas or as a gift. Gingerbread Birthday Cookies

I couldn't help but make some gingerbread birthday cookies.  I know we all think of Christmas when it comes to gingerbread but I thought I would make birthdays more exciting by making gingerbread cookies to celebrate. These Gingerbread Birthday Cookies are so easy and fun to make as you can decorate them in so many pretty ways with icing and sprinkles.  Why should gingerbread only be for Christmas time. I piped the royal icing to look like a drip on a real cake and added sprinkle to them. I was inspired by Rachel @frostedfujicakes to add sprinkles to the drips.  They look so pretty on her cakes.  You should head over and see her Instagram feed for beautiful cakes. These are also excellent as party favors for guests.  You can make different shapes, numbers or animals to decorate.  I hope you give it a try and let your imagine go wild. Gingerbread Birthday Cake

Where should I start? To be honest with you all, I really struggled with this theme.  For me the words 'out of the box' means something different and unique and nothing came to mind for ages and finally I decided on something I was happy with. I decided to make a gingerbread birthday cake.  We often only think of gingerbread at Christmas time and so I thought it doesn't have to be just for Christmas.  So, I created this birthday cake out of gingerbread and filled the centre with sponge cake. This cute and fun Gingerbread Birthday Cake is perfect to make for someone's birthday instead of the traditional cake. Christmas Gingerbread Village

I was so excited to be part of the #25daysofcollabs on Instagram with some amazing bakers to celebrate this festive season.  Each day starting from the 1st of December, different bakers have been involved in creating a bake from different themes. I picked the theme of a Christmas Village to be part of.  After searching and trying to come up with ideas on what to bake, I settled on a cute gingerbread sleigh with a village on top.  This Christmas Village is made entirely out of gingerbread and decorated with royal icing and sprinkles. This is the first gingerbread house & sleigh I've ever made.  I usually love to bake gingerbread men for Christmas.  But for this collaboration, I wanted a challenge.  So, I decided to design, make and decorate this Christmas Village. Gingerbread Men

One of my favourite Christmas bakes that I look forward to has to be baking Gingerbread Men. These gingerbread men are so cute and fun to make.  They are the traditional gingerbread cookies that are loved by all at Christmas time. Last Christmas I baked gingerbread men holding mini candy canes and everyone loved them and so this year I had to bake them again and share them with you all. This is a great recipe and you can decorate the gingerbread men anyway you like, using royal icing and adding some food colouring. But, if you only make the gingerbread men with the mini candy canes, you don't need to make a full batch of icing as you only need a very small amount for the eyes, mouth and to stick the candy canes onto the gingerbread man's body.
