Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Raspberry Cinnamon Rolls

I've been wanting to bake cinnamon rolls for awhile now and finally got around to making them.   They are easy to make but time consuming as you need to allow the dough to proof and rise. In saying that, it was worth the trouble as they were soft and fluffy. These Raspberry Cinnamon Rolls are light, fluffy and covered with a super delicious cream cheese glaze.  They were amazingly soft and easy to pull apart and even more delicious freshly baked from the oven. Chocolate Cakesicles

What do you do with left over cake when you cut the tops off to level layered cakes?  I have always wanted to try and make these cakesicles and I finally had left over cake from making my three layered birthday cake recently. These Chocolate Cakesicles are made of yummy cake covered with a chocolate coat and sprinkles.  They are cute to make for birthday parties, baby showers or graduations. I was inspired by Jaina @cocoaandsilk. She makes amazing looking cakesicles.  You have to check out her feed to see them. I didn't purchase a mould to make these, instead I just moulded them by hand, into the shape of ice-creams.  They are not all perfect but they come out pretty cute.  I'm thinking of purchasing some cakesicle moulds as these were a big hit amongst family and friends.  I made some for my friend's baby shower lunch and everyone loved them. Chocolate Raspberry Cake

I'm super excited to be doing a collaboration with my beautiful and talented friend Jaina @cocoaandsilk over on Instagram. The idea for this collaboration was birthdays, and Jaina's birthday is first up on the 25th of March. We decided that we would make something birthday-related with the main focus on amazing flavours. Jaina is a big fan of chocolate, salted caramel, peanut butter, mint chocolate and raspberries.  So, I decided to make this Chocolate Raspberry Cake to celebrate her birthday. This Chocolate Raspberry Cake is super moist with a delicious raspberry compote between the layers and is covered in sweet buttercream.  It is also decorated with buttercream and sprinkles to give it the birthday cake feel to it.  I also used bright colours as Jaina is a big fan of colourful things. I would like to thank Jaina for this opportunity as this is the first chocolate-layered birthday cake I have made.  Because of the collaboration, it really pushed me to start my cake

Mint Chocolate Chip Cookies

My beautiful friend Tammy @sweettoothcravingsandmore on Instagram asked me to be part of a Girl Scout Cookie Reinvention collaboration.  I'm excited to see what the other amazing bakers have baked.  Be sure to check out #girlscoutcookiereinventedcollab  To be honest with you all, I have never tasted a Girl Scout Cookie before but I did go onto the website to see what cookie flavours they had and from that I decided to reinvent one of their popular cookies - Thin Mints.   My reinvention of this cookie is more of a traditional looking cookie with peppermint flavour and added chocolate chips.  I also added some drops of green colouring for it to look like peppermint. These Mint Chocolate Chip Cookies are soft and so delicious with a lovely peppermint flavour which goes perfectly with the dark chocolate chips.  I'm not a big fan of peppermint flavour in desserts but these cookies have a lovely balance between the peppermint and chocolate which makes it not ove

Apple Tea Cakes

I've been wanting to add this classic Tea Cake recipe to my collection.  They are so easy to make and you only need some basic ingredients. I decided to make the tea cakes in a 12 mini loaf tin that I recently purchased.  However, you can make it in a round or square cake tin. These mini Apple Tea Cakes are simply delicious and perfect for everyday.  They are not overly sweet, making it ideal to have with a cup of tea or coffee.  I added some apples on top but you can make it without it and just sprinkle some cinnamon and sugar on top. Marshmallow Brownies

I haven't made brownies in so long and thought I would try making brownies with marshmallows in them. So, if you're looking for a chocolate brownie with some gooey marshmallows and a fudgy centre, these Marshmallow brownies are perfect for you. They are so easy to make and so delicious that you may need to make two trays. I added marshmallows to the brownie mixture and while they were baking the marshmallows rose to the top.  I think the next time I make them, I will add extra marshmallows and chocolate to the top of the brownie and return it to the oven for it to melt for a few minutes.  That would make them even more gooey. White Chocolate Chip Cookies

I don't know about you but I sure love a good white chocolate chip cookie or two or three. These White Chocolate Chip Cookies are soft and chewy.  It's hard to stop at one. They are easy to make and only take 10 minutes to bake. I often hear that people have cookie dough mixture in their freezer ready to go when they feel like cookies.  I just don't get how they even have left over cookie dough.  In my house the cookies are quickly gone after they are freshly baked, with none leftover for the next day.
