Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. There is just something about lemons and raspberries that make them go so well together.  I must say I'm a bit of a sucker for a good ol' lemon dessert. If you love lemon tarts but do not have time make one, this recipe is pretty close and will satisfy your lemony cravings. I'm a bit of a sucker for lemon desserts.  How about you?  I also love making mini desserts, so here are my mini lemon meringue tarts. I recently purchased a kitchen blowtorch and couldn't resist by making something meringue-based so I could use it. Lemon Tart

When life gives you lemons, you make a Lemon Tart of course.  At least that's what I love to bake with lemons. This is definitely a favourite amongst family and friends. This Lemon Tart is so delicious, with a fine buttery crust and tangy lemon filling. It is finished with drizzled melted chocolate and topped with raspberries and a touch of edible gold leaf.  The edible gold leaf used to decorate the raspberries are from @dollarsweets.  The touch of edible gold leaf gives the tart a beautiful finish.  However, you can enjoy this lemon tart on it's own with a dusting of icing sugar without the chocolate and raspberries. Chocolate Tart

I've been wanting to make a Chocolate Tart for awhile now and I finally had the chance to make one. I was deciding whether to make it with all chocolate or make a tart with a chocolate filling. In the end I decided that the more chocolate the better. This Chocolate Tart is so decadent but not overly sweet as it's made with dark chocolate.  The tart consists of a chocolate crust, filled with a melt-in-your mouth ganache-like mousse texture and topped with strawberries and raspberries sprinkled in gold leaf. This is my first time using edible gold leaf by @dollarsweets.  The instructions on the packet was easy to follow. It outlined the best way to use it and things to avoid.  I used a combination of a pair of tweezers and a paint brush to apply the gold leaf to the raspberries. Halloween Galettes

Here is another fun Halloween bake. A while ago, I started making galettes and I have to say they are so delicious.  If you have never tasted a galette, I would say they taste similar to danish pastries. So for this bake, I wanted to create some Halloween treats using this pastry. These Halloween Galettes are made from a sweet pastry dough which is light and flaky.  They are filled with delicious apricot halves. They are an easy and fun bake for this festive season. You could use commercially purchased pastry but making this pastry is quick and easy.  The pastry tastes so good and you will not be disappointed. Passionfruit Custard Tarts

I decided to make these mini Passionfruit Custard Tarts as a birthday treat.  I don't normally have a birthday cake on my birthday.  I like to have lots of small desserts instead.  One year I got a variety of vanilla slices and that was so delicious as I got to try all the different varieties available.  I must say my favourite is still the French vanilla slice. Another, funny thing is that I don't think I've ever made my own birthday cake before. Maybe next year as this year I just arrived home from an overseas holiday and am still feeling the jet-lag. These mini Passionfruit Custard Tarts are delicious and fun to make.  Each tart has a melt-in-your-mouth shortcrust pastry, filled with a smooth creamy custard and topped with fresh passionfruit pulp which gives it a nice tang. Zesty Lemon Bars

I made these Zesty Lemon Bars last year using a slightly smaller tin and felt that the ratio of lemon filling to base was not balanced.  Today, I finally got around to making it again using a larger tin and I'm happy with the results. These Zesty Lemon Bars turned out so delicious.  The lemon filling is full of tangy-ness and the shortbread base crumbles and melts in your mouth.  This is a great recipe for lemon lovers. These easy lemon bars will become a family favourite.  They can be made in advance and are great to serve at parties, afternoon tea or just when you feel like something tangy and delicious. Chocolate Eclairs

This week's exciting destination for the famous cities collaboration with Taryn @life_and_sprinkles and Rebecca @rosesandwhiskers is Paris, the city of love. I decided to pick Paris as it's one of the famous cities I would love to visit one day.  Not only do I want to see the beautiful landscape but I'm dying to try all the divine desserts that Paris has to offer. When I think of Paris, there are so many delicious desserts that come to mind.  I decided to make eclairs as it's one of the iconic pastries known to Paris.
