Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Christmas Coconut Cupcakes

I wanted to use desiccated coconut to create the look of snow on cupcakes for Christmas. So, I decided to make some coconut cupcakes. These coconut cupcakes are light, fluffy and moist with a delicious coconut flavour.  To make it feel like Christmas, I made some Christmas trees using royal icing, chocolate sticks and sprinkles of course. These cupcakes are a fun idea and an easy bake for Christmas.  I would recommend that if you wanted to add the Christmas tree toppers that you make them the day before so the royal icing dries completely.  Otherwise the royal icing trees may break if not fully dried. Festive Shortbread Cookies

I'm so excited about Christmas baking that I kind'a started a bit early this year. I know it's November but I thought I'd start sharing some recipes to inspire you to bake for Christmas. One of the things I always bake at Christmas time are shortbread cookies.  These festive shortbread cookies are so easy and fun to make.  But best of all they taste delicious as the cookies melt-in-your mouth. I love to drizzle melted chocolate and add sprinkles onto them.  There are so many different shaped cookie cutters you can use.  As usual, I love to make mini treats so I used a small star cutter.  This recipe makes lots of little cookies.  Or you can make quite a few large cookies instead. Hot Chocolate Mini Marshmallow Cookies

I was inspired to make these Hot Chocolate Mini Marshmallow Cookies after seeing them on @beyond.the.butter's Instagram post. These cookies are the most rich, chocolatey and gooey goodness I've ever eaten.  They taste so delicious that it's hard to stop at one cookie. I think I just found my new favourite chocolate cookie recipe. If you love my brownie cookie recipe, you definitely need to try this recipe.  It's so good. The recipe below has been converted into Australian measurements and I also used dark chocolate instead of semi-sweet chocolate chips. Unicorn Sugar Cookie Bars

I was excited to bake these sugar cookie bars from @twosugarbugs.  These sugar cookie bars are easy to make.  They are very soft, covered with a delicious buttercream and lots of sprinkles on top. I decided to turn them into Unicorn Sugar Cookies Bars instead, so that I could try out some more of my Americolor food gels.  This is a great recipe for children's birthday parties or just as a treat.  If you wanted the more adult version, do not add colour gels to the buttercream. With the unicorn buttercream I got a bit excited when the pink and blue icing blended together to produce a beautiful purple, but I think I over-mixed when spreading it over the cookie sheet.  Next time I make it, I will try not to over mix the colours, so that more pink and blue icing are visible. Mini Mango Cheesecakes

There are so many amazing bakers on Instagram.  I have so many favourite pages that I love following.  They are all inspiring and I love their baking creations.  One of my favourite's has to be @sugaretal.  Sonail Ghosh is an amazing photographer and baker.  If you haven't seen her page, you definitely need to go and have a look. I was inspired by one of her posts for mini cheesecakes.  I have always wanted to make them. I changed the recipe slightly.  I used Marie biscuits instead of digestive biscuits and I used pureed mangoes instead of peanut. These mini mango cheesecakes are so easy to make and taste delicious.  The mango flavour is divine. If you add some strawberries, blueberries and mango puree on top when decorating them, you will not be disappointed.  They taste amazing. Coconut Ice

These cute pink and white squares of goodness are a classic favourite treat for most children in Australia.  I remember having them as a child.  I loved the colour of it and the coconut flavour. Coconut ice is a no-bake treat which is super easy and fun to make.  They taste delicious with a sweet coconut flavour and you can't go wrong with a recipe that contains condensed milk. These make a great homemade little gift for Christmas or someone's birthday.  I hope you give this recipe a try as it's so easy to make. Viennese Biscuits

These Viennese biscuits are often found at bakeries and cafes.  I have often made them by just piping them into round biscuits.  This time I thought I would make the traditional looking Viennese finger biscuits with the ends dipped in chocolate. These buttery melt-in-your-mouth biscuits are so delicious.  They taste even better when the ends of the biscuits are dipped in chocolate and sprinkles added.  You can also sandwich two biscuits together with jam and buttercream. I recommend that you make these biscuits in warmer weather or make sure the butter is at room temperature and quite soft.  This helps to make the mixture easier to pipe onto the baking trays.
