Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Caramel Sauce

I don't know about you but I'm a sucker for a bit of caramel.  I decided to make some homemade caramel sauce. This caramel sauce is so easy to make and is ideal for drizzling over ice-cream or any dessert.  It's also great for spreading in between cake layers as a filling or you can simply eat it with a spoon from the jar. If you wanted to make salted caramel just remember to add a bit more salt to taste or about ½ teaspoon to this recipe. Happy Baking xo Caramel Sauce Ingredients · 60 grams salted butter · ½ cup milk · 1 cup brown sugar · ¼ teaspoon baking soda Instructions 1. Place all ingredients into a saucepan over low to medium heat and stir until all ingredients have melted and the mixture thickens (this can take up to 10 minutes). 2. Purple Rose Cake

I made this cake as part of a very special collaboration with a group of fun bakers over on Instagram. It's to celebrate Louise's birthday and her love for the colour purple. This Purple Rose Cake is made with a super moist chocolate cake with delicious Nutella in between the layers.  It is covered in a smooth Swiss meringue buttercream and decorated with cute purple piped roses. Geode Sprinkle Cake

This cake is inspired by the beautiful and talented Sheri @sheri_wilson_ over on Instagram. A group of bakers on Instagram decided to make cakes inspired by Sheri as last week her Instagram account got hacked and deleted.  She is currently using a new account but she has lost all her hard work and close to 100K followers.  Please head over to Instagram and support her new account. I decided to make this Geode Sprinkle Cake as it's a technique I have not tried.  I love the use of sprinkles instead of sugar rock. This Geode Sprinkle Cake is made of a moist vanilla cake with a delicious raspberry jam between the layers and covered in a smooth Swiss meringue buttercream.  It is finally decorated with sprinkles. It was fun to learning this new technique but I definitely want to try some gold leaf in the future. This is a special blog.  One year ago, today, I started this blog and my Instagram account to inspire and encourage people of all ages to bake. It has been an exciting experience so far.  I have met so many beautiful people and talented bakers from all over the world and formed some special friendships. I decided to a make this cute 4-inch Sprinkle Birthday Cake to celebrate this special occasion. This Sprinkle Birthday Cake is super moist with a tangy passionfruit syrup between the layers and is covered with a Swiss meringue buttercream and decorated with lots of sprinkles.  It's a perfect birthday cake to make as it's easy and fun. Sprinkle Cakesicles

I've had so fun making cakesicles with my ice-cream moulds.  However, I have not mastered the skill of coating them perfectly using the dipping method. So, I decided to try a new technique of covering the cakesicles with chocolate.  This method involves coating the ice-cream moulds and then add the cake mixture and then more chocolate. I found this method to be more successful in creating a smoother and more perfect looking cakesicle. Unfortunately, when I was doing this, it was at night and the pictures were not great. Berry Galettes

I have wanted to make these rustic looking pastry desserts called galettes for awhile now.  Today, I finally got around to making them. These Berry Galettes are simply delicious.  They are made from a sweet pastry dough which is light and flaky. The filling consists of a range of juicy berries such as raspberries, blueberries, blackberries and strawberries. Making the sweet pastry is worth the time as the result is so amazingly delicious.  Although, you can use commercially purchased pastry as well.  I highly recommend making this pastry as it's quick and easy. Oreo Cake

I made this Oreo cake as a special celebration for my 100th post on Instagram.  I can't believe that I have posted that many times on my feed. I decided to make this Oreo cake because I wanted to make a cake that I could eat and enjoy.  Most of the cakes that I had made previously was for someone's birthday or for a collaboration, and I normally gave them away. I also wanted to try creating a drip on this cake.  Drips can be tricky to do if the consistency is not correct.  I was really rapped with the way the chocolate drip turned out. This Oreo Cake is made of a moist vanilla cake and is loaded with crushed Oreo throughout the cake. Each cake layer is filled with a delicious Swiss meringue buttercream and chocolate ganache.  The cake is finally covered with a yummy Oreo Swiss meringue buttercream and decorated with swirls and Strawberry Oreos and sprinkles in the centre of the cake.
