Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. I have always wanted to make these adorable-looking apple rose pastries.  So when I was asked to be part of an Autumn themed collaboration on my Instagram I thought this would be a great recipe to try out. They are so easy and fun to make.  The best part is that you can add any type of jam filling to the centre and cinnamon for added taste. I really enjoyed making these apple rose pastries and they tasted so good with some ice-cream on the side. I've always wanted to make a jelly slice but never got around to making it.  I was looking through some recipes I saved awhile ago and come across an image of a jelly slice.  I think it was a sign for me to make it and so I did. This strawberry jelly slice is so delicious. It has a biscuit base, followed by a creamy lemon middle layer and a smooth jelly top. It was enjoyed by everyone and I have already had requests for more.  This slice is fun to make and not only does it look visually appealing but it tastes so good.  I can't believe I waited so long to make it.  It's definitely a new favourite. Lemon Meringue Tart

Lemon meringue tarts are one of the most favourite desserts in my family.  Before I can even make the meringue to go on top, everyone is asking if they can eat it.  But the wait is so worth it. This lemon meringue tart is so delicious. It has a shortcrust pastry as the casing for the tart, a tangy lemon custard for the filling and a fluffy meringue top. If you love lemons I recommend you make this tart.  There are a few steps involved in making it but the end result and taste is worth the trouble. You can make this lemon tart without adding the meringue top if you don't like meringue or just can't wait to eat it. Because Spring is in the air, I used some cherry blossoms from my garden to decorate the lemon meringue tart. Nutty Turtle Macarons

Turtles are one of my favourite sea-life animals.  They are so adorable and I just love them.  Not only do I collect turtle things but I love seeing turtle related food things. If you read my last blog, you will realise that I just discovered how delicious peanut butter is in desserts.  So to follow on with the theme of peanut butter, I decided to make these super cute Nutty Turtle Macarons. These turtle macarons are so fun to make. They have a delicious peanut butter filling in the centre and a sprinkle of crushed peanuts for the turtle shell. I used white chocolate buttons for the head and feet of the turtle. To create the turtle eyes I piped two dots using some coloured icing. I was really happy with the way these turtle macarons turned out.  They are almost too cute to eat. Sprinkle Peanut Butter Cups

If you love peanut butter and chocolate this is the recipe for you. These delicious sprinkle peanut butter cups are so easy and quick to make.  You can make these and keep them in the freezer for when you need a sweet treat. There is no baking involved.  Just whip up the peanut butter cream for the centre and melt some chocolate and pop them into mini cupcake cases. I added some sprinkles for some colour and sprinkles make everything better. Happy Baking xo Sprinkle Peanut Butter Cups Ingredients · 1 cup icing sugar · ¾ cup smooth peanut butter · 60 grams unsalted butter · 375 grams dark chocolate Instructions 1. Line a 24 mini cupcake pan with patty cases. 2. Place the butter, icing sugar and peanut butter into a bowl and using an electric beater beat until mixture is light and fluffy. This will take about 5 minutes. 3. Place mixture into a piping and set aside. 4. Place chocolate into a heatpro
