Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. Coconut Lemon Slice

I wanted to share this classic no-bake Coconut Lemon Slice with you.  This recipe is so easy to make and is a great sweet treat that everyone will enjoy.

This slice has a delicious biscuit base with a lemony icing on top.  It's perfect for afternoon tea or as a treat for when you crave something sweet.

This slice is great to make as you can cut them into bite-size pieces.  I often make it for parties and everyone loves them as it's a classic childhood treat.

Coconut Lemon Slice

Ingredients

· ½ cup condensed milk
· 100 grams butter
· 200 grams Marie biscuits
· 1 cup desiccated coconut
· 1 lemon rind

Lemon Icing

· 2 cups icing sugar
· 40 grams butter
· 1 lemon, juiced

Instructions

1. Line a rectangle baking pan with some baking paper.

2. Place condensed milk and butter into a saucepan over medium heat. Cook until butter melts.

3. Place biscuits into a food processor and process to fine crumbs. Combine biscuit crumbs, coconut and 2 teaspoons lemon rind into a bowl.

4. Add the hot butter mixture, stir until well combined.

5. Press biscuit mixture into the baking pan. Refrigerate until firm.

Lemon Icing

6. Place icing sugar, softened butter and 2½ tablespoons lemon juice into a bowl. Beat mixture until smooth. Spread icing over the slice. Refrigerate for 30 minutes or until the icing has set. Cut into pieces.

Tips

· If you don’t have a food processor, you can use a rolling pin to crush the biscuits into crumbs.
