Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. One of my beautiful friends was getting married and I decided to surprise her with these cute cookies. This is the second time I've decorated cookies using royal icing.  There is still lots I need to learn about cookie decorating.  I had so much fun making and decorating these cookies.  I definitely have a new appreciation for cookie decorators.  These cookies were fun to decorate but quite time consuming. I've learnt quite a bit about the different icing consistencies and still need to work on my piping skills.  I look forward to decorating more cookies in the future. If you love Maltesers, here is the ultimate cookie for you.  These cookies are not only chocolate but have delicious pieces of Maltesers and chocolate chips throughout them.  It's a chocolatey cookie for sure. These Malteser Chocolate Cookies are full of chocolate flavour, starting with a chocolate-based cookie filled with Malteser pieces and dark chocolate chips. I decided to make these Malteser Chocolate Cookies as I was given a few kilograms of this delicious malt chocolate balls.  I thought it would be a great way to enjoy this chocolate treat in a chocolate cookie with chocolate chips. Zesty Lemon Bars

I made these Zesty Lemon Bars last year using a slightly smaller tin and felt that the ratio of lemon filling to base was not balanced.  Today, I finally got around to making it again using a larger tin and I'm happy with the results. These Zesty Lemon Bars turned out so delicious.  The lemon filling is full of tangy-ness and the shortbread base crumbles and melts in your mouth.  This is a great recipe for lemon lovers. These easy lemon bars will become a family favourite.  They can be made in advance and are great to serve at parties, afternoon tea or just when you feel like something tangy and delicious. Chocolate Dipped Strawberries

Chocolate and strawberries are such a delicious combination.  I've purchased 16 punnets of strawberries in the last two weeks to support the local farmers. The strawberries have all been eaten fresh or dipped in chocolate.  I have dipped many punnets of strawberries to eat and as gifts for friends.  They make awesome gifts and take no time to make. Chocolate Dipped Strawberries are so easy and fun to make.  All you need is to melt your favourite chocolate and cover those strawberries. To make them pretty, just drizzle more chocolate over them and add sprinkles. This week I dipped some strawberries in white chocolate and added sprinkles and they look so pretty and tasted delicious. Dark Chocolate Ganache Macarons

I thought I would share an easy, fun and quick way to make your macarons look pretty, just like the ones you buy at the cafes and stores. All you need to do is melt some chocolate and place it into a piping bag or snaplock bag.  Snip a very small section of the end and pipe over the macarons and add sprinkles.  It's that easy and the macarons look so cute and pretty. These Dark Chocolate Ganache Macarons are so delicious as the are filled with a chocolate ganache centre and topped with some chocolate and cute sprinkles. When you bite into it, you get the crispy shell, followed by the chewy centre. The hardest thing is to leave the macarons to mature overnight in the refrigerator before eating them.  I couldn't wait and I had to try one and it was delicious. Lemon Creme Delight

If you are looking to make an easy and delicious dessert then this is definitely the one for you. I wanted to use my homemade lemon curd in a dessert that was yummy but not too rich.  So I came up with this simple recipe. These Lemon Creme Delights are made of delicious layers of biscuit crumb, lemon curd and lemon curd cream.  The bottom layer starts with a lovely buttery biscuit crumb, followed by a touch of lemon curd throughout the next layer and finally topped with the lemon curd cream and fresh berries.  Every spoonful is delicious as you can taste all the different layers of goodness. It is an easy and fun dessert to make and serve at your next dinner party. 80s Cassette Tape Cookies

I'm taking part in an 80s collaboration over on Instagram hosted by the sweet and talented Staci @stacibakesalot  Be sure to check out all the wonderful bakes from everyone #eigthiescollab2019 When I think about the 80s, lots of things come to mind but I had trouble coming up with a bake.  After searching for inspirations on Pinterest and asking my friends for ideas, I finally decided to create 80s Cassette Tape Cookies. These 80s Cassette Tape Cookies are full of rich chocolate flavour and are decorated with royal icing.  They are fun to decorate and are great for themed parties.  You can decorate them with so many different designs. I love taking part in collaborations as it challenges me to try new techniques or be creative with my bakes.  For this bake it was the first time decorating with royal icing to cover a whole cookie.  There was so much to learn about icing consistency.  I had fun experiencing with this technique.  I hope you get a chance to try it out too.
