Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Lemon Creme Delight

If you are looking to make an easy and delicious dessert then this is definitely the one for you.

I wanted to use my homemade lemon curd in a dessert that was yummy but not too rich.  So I came up with this simple recipe.

These Lemon Creme Delights are made of delicious layers of biscuit crumb, lemon curd and lemon curd cream.  The bottom layer starts with a lovely buttery biscuit crumb, followed by a touch of lemon curd throughout the next layer and finally topped with the lemon curd cream and fresh berries.  Every spoonful is delicious as you can taste all the different layers of goodness.

It is an easy and fun dessert to make and serve at your next dinner party.

Lemon Crème Delight

Ingredients

· ½ cup lemon curd (refer to recipe on blog)
· 1 cup thickened cream
· 35 grams butter
· 65 grams Marie biscuits
· Extra lemon curd for spreading in between the layers
· Fresh berries for decoration

Instructions

1. Place biscuits into a food processor and pulse until biscuits resemble crumbles. Add cooled down melted butter, set aside.

2. Place thickened cream into bowl and beat until stiff peaks form and fold in the lemon curd.

3. Place a few teaspoons of biscuit crumb at the bottom of each glass, spoon small amounts of the lemon curd and pipe the cream over. Finally, sprinkle some biscuit crumbs over the cream. Repeat this step for as many layers as you like.

4. Garnish with some fresh berries to serve.

Tips

· This recipe makes enough to fill 4 glasses but it all depends on how much mixture is placed in each glass and the size of the glasses.
