Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. I recently managed to get some fresh passionfruits at the market and had to make some mini cheesecakes with them.  I love the tangy-ness that fresh passionfruits have and the refreshing after taste.  I don't know about you but I also love the smell of fresh passionfruits. These Mini Passionfruit Cheesecakes are so easy and quick to make.  They have a lovely biscuit base with a delicious layer of cheesecake topped with some fresh passionfruit pulp.  They are great to make for parties or just because you love cheesecakes. New York Cheesecake

I'm so excited to take part in a Theme Month with the sweet and beautiful Rebecca @rosesandwhiskers and Taryn @life_and_sprinkles.  These girls have done a few theme weeks and months together over the years. This time round they have kindly invited me to take part and of course I said YES! The theme for this month is famous cities around the world.  So, every Sunday (Monday Aussie time) for the month of August, we will post a bake from our selected city. Starting off this week, we are all posting a bake from New York City. I decided to bake a New York Cheesecake as that is one of the most iconic desserts that come to mind when I think of New York City.  I would love to visit New York one day and taste a real New York Cheesecake. This cheesecake is smooth, rich and creamy in texture with a golden crust. The addition of lemon juice and lemon zest gives it a lovely flavour.  It's a delicious bake. Mini Mango Cheesecakes

There are so many amazing bakers on Instagram.  I have so many favourite pages that I love following.  They are all inspiring and I love their baking creations.  One of my favourite's has to be @sugaretal.  Sonail Ghosh is an amazing photographer and baker.  If you haven't seen her page, you definitely need to go and have a look. I was inspired by one of her posts for mini cheesecakes.  I have always wanted to make them. I changed the recipe slightly.  I used Marie biscuits instead of digestive biscuits and I used pureed mangoes instead of peanut. These mini mango cheesecakes are so easy to make and taste delicious.  The mango flavour is divine. If you add some strawberries, blueberries and mango puree on top when decorating them, you will not be disappointed.  They taste amazing. Strawberry Jelly Slice

I've always wanted to make a jelly slice but never got around to making it.  I was looking through some recipes I saved awhile ago and come across an image of a jelly slice.  I think it was a sign for me to make it and so I did. This strawberry jelly slice is so delicious. It has a biscuit base, followed by a creamy lemon middle layer and a smooth jelly top. It was enjoyed by everyone and I have already had requests for more.  This slice is fun to make and not only does it look visually appealing but it tastes so good.  I can't believe I waited so long to make it.  It's definitely a new favourite.
