Chocolate Chip Brownie Muffins

Image
I'm not sure about you but I'm a bit of a brownie lover, especially chewy fudgy brownies.  They are my favourite. I couldn't resist so I made these brownie muffins.  These Chocolate Chip Brownie Muffins are so rich and chocolatey and taste just like a regular brownie but in a muffin form. For fudgy brownie muffins bake until the centre is still a little moist.  But if you love a cakey brownie remove them from the oven when the skewer comes out clean. These brownie muffins are so delicious warm or cold.  You can pop them in the microwave for a few seconds to warm them up.  If you're a brownie lover, this is a delicious bake you should try. Happy Baking xo Chocolate Chip Brownie Muffins Ingredients · 1 cup plain flour · 1 tablespoon cocoa powder · ¼ teaspoon salt · ½ teaspoon baking powder · 1 teaspoon vanilla extract · 225 grams unsalted butter · 150 grams dark chocolate · ½ cu...

If you love chocolate, brownies and cookies, you definitely need to bake these.  This recipe is so delicious and you will not be disappointed.  It's one of my all time favourite cookie recipes. These Chocolate Brownie Cookies are so delicious and full of chocolate flavour.  They taste just like a brownie but in a cookie.  Hard to stop at just one cookie. You can eat the cookies without adding the chocolate ganache in the middle but the ganache takes it to the next level of yum. Hope you give this recipe a try soon. Mini Brownie Cheesecake Bites

Image
Brownies are one of my favourite baked treats to have and in mini form, they are so yummy.  The other ingredient I also love is cream cheese frosting.  So these mini brownie cheesecake bites are the perfect combination of both. These Mini Brownie Cheesecake Bites are so fudgy and delicious with the cream cheese filling that it's hard to just have one. The cream cheese filling goes so well with the chocolate fudge brownie. They are so easy and quick to make as a sweet treat for any brownie lovers. I found that not all the brownies were easy to remove from the mini cupcake tins, even though the tins were sprayed with oil.  I think next time I might try baking them with the cupcake liners. Happy Baking xo Mini Brownie Cheesecake Bites Ingredients · 100 grams butter · 150 grams dark chocolate · 1 egg · ¾ cup brown sugar · ⅓ cup plain flour · ¼ cup sour cream Filling · 125 grams cream cheese · ...

Marshmallow Brownies

Image
I haven't made brownies in so long and thought I would try making brownies with marshmallows in them. So, if you're looking for a chocolate brownie with some gooey marshmallows and a fudgy centre, these Marshmallow brownies are perfect for you. They are so easy to make and so delicious that you may need to make two trays. I added marshmallows to the brownie mixture and while they were baking the marshmallows rose to the top.  I think the next time I make them, I will add extra marshmallows and chocolate to the top of the brownie and return it to the oven for it to melt for a few minutes.  That would make them even more gooey. Happy Baking xo Marshmallow Brownies Ingredients · 150 grams dark chocolate · 180 grams butter · 1¾ cup caster sugar · 4 eggs · 1 teaspoon vanilla essence · ¾ cup plain flour · 2 tablespoons self-raising flour · ⅓ cup cocoa powder · 50 grams dark chocolate, chopped (extr...

Chocolate Brownie Cookies

Image
A few years ago I was sitting in the waiting room at the doctors and come across this recipe for chocolate brownie cookies and have wanted to make them but never did.  While looking through my photo folders on my phone recently I came across the photo of the recipe I took.  So I decided to finally make them. These chocolate brownie cookies are so delicious and taste just like a chocolate brownie but in a cookie. It's hard to just eat one cookie because they are filled with a chocolate frosting as well. You could just eat the cookies without the frosting but they are extra good with the filling. There are a few steps in making the brownie cookies but they are worth making if you love brownies and cookies or chocolate in general.  Great recipe to try. Happy Baking xo Chocolate Brownie Cookies Ingredients · 40 grams butter · 200 grams dark chocolate, finely chopped · 2 eggs · ⅔ cups caster sugar · 1 teaspoon vanill...

Fudgy Chocolate Brownie

Image
I remember the first time I had a fudge brownie it was from Mrs Fields.  She makes the best cookies and brownies.  Her fudge brownies are like eating a chocolate bar.  Brownies are easy to make and I love the smell it leaves throughout the house.  It smells so good. What I love about making brownies is that if you overcook it, it still taste delicious.  Instead of having a fudge brownie you end up with a cakey brownie.  That's hopefully if you didn't eat most of the raw brownie mixture before putting it into the oven. Happy Baking xo Fudgy Chocolate Brownie Ingredients · 200gm dark chocolate, chopped · 250gm butter · 1¼ cups brown sugar · 4 eggs · ¾ cups plain flour · ¼ teaspoon baking powder · ⅓ cup cocoa powder Instructions 1. Preheat oven to 180°C. 2. Line a 17cm rectangle brownie tin with baking paper. Making sure to extend the baking paper about 2cm over the tin....
