Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Moist Vanilla Cupcakes

I wanted to try out a new cupcake recipe and since my two nephews were having birthday parties, it was the perfect opportunity to make some cupcakes. These Vanilla Cupcakes were light, moist and fluffy. They were decorated with a simple delicious American buttercream and topped with some cute sprinkles. This recipe makes 48 mini cupcakes or 24 regular sized cupcakes.  I prefer to make mini cupcakes as it's easier to eat as sometimes, a full sized cupcake is too much to eat at a party when there's always other delicious foods to eat. Mini Fairy Floss Cupcakes

I had a bucket of fairy floss and thought I would use it in my baking.  I made mini cupcakes and added some fairy floss to the top of each cupcake. These Mini Fairy Floss Cupcakes are not only cute but fun to make as a treat. I would like to share with you that adding fairy floss to cupcakes is not an easy task as the fairy floss stick together and forms a sugary ball when the heat of your hand touches it. Also, it's important to only add the fairy floss just before serving them as moisture 'melts' the fairy floss. The fairy floss sure looks delicious and definitely worth adding to the tops of cupcakes.  Have fun with the fairy floss and hopefully you don't end up eating most of it before they get to the cupcakes like I did. At Christmas time on Instagram, the @csrsugar had a wonderful twelve days of Christmas giveaway.  I was one of the lucky winners. I won the first three days of prizes.  It included some buttercream icing mixes, specialty sugars and a gorgeous 'In The Forest' mug from Mason Cash. I have been wanting to try out the All Natural Buttercream Icing Mix and so I made these delicious vanilla cupcakes.  The CSR buttercream icing was super easy to make.  It produced a light and fluffy  buttercream perfect for frosting cupcakes. These vanilla cupcakes are ideal as the base for adding your favourite frosting on top.  They are easy to make and light in texture.  I also added some fun to the cupcakes by using @droetkerbakingaunz Midnight Magic sprinkles which looked gorgeous on the cupcakes. Birthday Cake Cupcakes

While I was on holidays overseas a few weeks ago it was my birthday and for the first time I didn't have cake on that day, but I did have other delicious foods to celebrate. So now that I'm back in my kitchen, I decided to make my own birthday cake.  You all know that I love cute things so I decided to make some birthday cake cupcakes. These Birthday Cake Cupcakes are so fun to make. Not only are they so cute but they take less then half the time to bake and decorate.  And an added bonus, you can also eat the whole cake, not just a slice because they are so little. I piped different decorations on the cupcakes to make them look like a full sized cake. I then decorated them with different types of sprinkles. You can decorate the cupcakes anyway you like.  You can add colour to the buttercream icing too. Next time you don't have enough time to make a birthday cake, you could make these cuties instead. Mini Cupcakes

Everytime I walk through the bakery section of the supermarket and I see the mini cupcakes with chocolate icing I think to myself, I should make some of these at home.  So I did and they were so fun and easy to make. This recipe is super easy.  All you need to do is just place all the ingredients into a bowl and use an electric mixer, and there you have the cupcake batter.  You can use this batter to make full size cupcakes or mini ones. The chocolate ganache icing is also easy to make and so delicious.  You might end up eating all the left over ganache icing with a spoon. This recipe is fun to make with little kids as an activity and they can decorate them with sprinkles, lollies, chocolate or anything sugary.
