Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Are you looking for a cosy and homely type of dessert? This Apple and Raspberry Crumble is the recipe for you to try.  The great thing about this recipe is that you can substitute the apples or raspberries for any of your favourite fruit. This Apple and Raspberry Crumble is not only easy to make but taste super delicious served straight from the oven with some ice-cream, custard, cream or simply on it own.  In every spoonful you get the taste of the soft apple slices, the tangy-ness  of the raspberries and the delicious crumble on top. The added bonus is that you only use 3 tablespoons of brown sugar for this recipe. Square Sheet Cake

I'm super excited to be taking part in this special collaboration organised by Joana @sweets_by_joana to surprise Sasha @ohlalaboulangerie for her birthday on the 25th of October.  Be sure to head over to Instagram and follow #sashabirthdaytribute to see all the amazing birthday creations. I decided to make a Square Sheet Cake to celebrate Sasha's birthday. This Square Sheet Cake is made of  moist vanilla cake with white chocolate swirls.  It's decorated with a deliciously smooth Swiss meringue buttercream and finally finished with some cute sprinkles. I used a variety of piping tips to decorate the top of the cake.  The great thing with this type of decorating is it means that you can let your imagination go wild with your own unique design every time. Chewy Brownie Cookies

When you crave brownies but don't want to wait until the brownie cools completely so you can cut it into squares and eat it, why not make some brownie cookies instead. These Chewy Brownie Cookies are so delicious and taste just like a brownie but in a cookie form.  These cookies are thin, chewy and full of chocolate flavour.  They are so good that it's hard to stop at one.  But more importantly, you only have to wait two to three minutes for them to cool down before being able to consume a few at a time. When I bake these again, I will add a bit more self-raising flour (maybe  ¼ cup) to give the cookie more body. I will let you know how I go. Halloween Galettes

Here is another fun Halloween bake. A while ago, I started making galettes and I have to say they are so delicious.  If you have never tasted a galette, I would say they taste similar to danish pastries. So for this bake, I wanted to create some Halloween treats using this pastry. These Halloween Galettes are made from a sweet pastry dough which is light and flaky.  They are filled with delicious apricot halves. They are an easy and fun bake for this festive season. You could use commercially purchased pastry but making this pastry is quick and easy.  The pastry tastes so good and you will not be disappointed. Halloween Marshmallow Chocolate Chip Cookies

Halloween is just around the corner and I've been wanting to try making marshmallow spider webs.  My friends Amanda @afewcakes and Stefanie @okcsweets have done this technique on their fun Halloween cakes. I decided to try is technique and dress up the classic chocolate chip cookies for Halloween.  I had so much fun with the melted marshmallows.  It was very sticky but I really enjoyed stretching it over the cookies. These Halloween Marshmallow Chocolate Chip Cookies are so easy and super fun to make.  You can't go wrong with the classic chocolate chip cookie that everyone loves and topping it with marshmallow and sprinkles is the perfect Halloween treat. Passionfruit Custard Tarts

I decided to make these mini Passionfruit Custard Tarts as a birthday treat.  I don't normally have a birthday cake on my birthday.  I like to have lots of small desserts instead.  One year I got a variety of vanilla slices and that was so delicious as I got to try all the different varieties available.  I must say my favourite is still the French vanilla slice. Another, funny thing is that I don't think I've ever made my own birthday cake before. Maybe next year as this year I just arrived home from an overseas holiday and am still feeling the jet-lag. These mini Passionfruit Custard Tarts are delicious and fun to make.  Each tart has a melt-in-your-mouth shortcrust pastry, filled with a smooth creamy custard and topped with fresh passionfruit pulp which gives it a nice tang.
