Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. Halloween Marshmallow Chocolate Chip Cookies

Halloween is just around the corner and I've been wanting to try making marshmallow spider webs.  My friends Amanda @afewcakes and Stefanie @okcsweets have done this technique on their fun Halloween cakes.

I decided to try is technique and dress up the classic chocolate chip cookies for Halloween.  I had so much fun with the melted marshmallows.  It was very sticky but I really enjoyed stretching it over the cookies.

These Halloween Marshmallow Chocolate Chip Cookies are so easy and super fun to make.  You can't go wrong with the classic chocolate chip cookie that everyone loves and topping it with marshmallow and sprinkles is the perfect Halloween treat.

Halloween Marshmallow Chocolate Chip Cookies

Ingredients

· 125 grams unsalted butter
· 1½ cups brown sugar
· ½ cup sugar
· ¼ teaspoon salt
· 1 teaspoon baking soda
· 2 eggs
· 2 teaspoons vanilla extract
· 1¾ cups plain flour
· 1½ cups dark chocolate chips

Decorations

· Marshmallows
· Sprinkles

Instructions

1. Preheat oven to 180°C. Line trays with baking paper.

2. Using an electric beater, cream butter, brown sugar and sugar until pale and fluffy.

3. Add eggs and vanilla extract and mix until smooth.

4. Fold in sifted flour, baking soda and salt, a third at a time until combined. Avoid over mixing it.

5. Add in the dark chocolate chips.

6. Place one tablespoonful of cookie dough onto the baking tray. Make sure to leave about 2cms apart between each cookie.

7. Bake in oven for 8-10 minutes. Allow the cookies to cool on baking trays.

Decorating

8. Place a few marshmallows into a microwaveable bowl and microwave for 20 seconds. Give it a stir and wait 10 seconds before using it.

9. Using your fingers stretch the melted marshmallow and place it over the cookies. Add sprinkles and eye balls to give it a Halloween feel.

Tips

· These cookies spread when baked; so remember to leave room between each cookie on the tray.
· The melted marshmallows cool quite quickly but you can always remelt it for another 20 seconds. Just remember to let it cool slightly before using it.
· Melted marshmallows are very sticky but running your fingers under warm water removes it quite easily.
