Easy Chocolate Cake With Raspberries

Image
I have been wanting to make a chocolate cake for a long time and when I saw the photo of this easy Chocolate Cake with Raspberries on @sugaretal website, I knew I had to make it. This easy chocolate cake was fun to make and tasted so delicious with the combination of fresh raspberries, blueberries, strawberries and a chocolate fudge frosting. I would have liked to make it with three layers of cake.  However, I didn't have three 6-inch tins to make it in.  So, instead I baked it in two tins.  I think that the tins I had might have been too big.  When I purchase some 6-inch tins I would love to bake it again. Below is the original recipe from www.sugaretal.com or you can simply click the link. http://www.sugaretal.com/2016/03/09/3535/ Easy Chocolate Cake With Raspberries Makes a 6 inch, 3-layered round cake or an 8 inch single cake 1/2 cup cocoa 1/2 cup boiling water (125 ml) 125 g unsalted but

Christmas Gingerbread Village

Image
I was so excited to be part of the #25daysofcollabs on Instagram with some amazing bakers to celebrate this festive season.  Each day starting from the 1st of December, different bakers have been involved in creating a bake from different themes. I picked the theme of a Christmas Village to be part of.  After searching and trying to come up with ideas on what to bake, I settled on a cute gingerbread sleigh with a village on top.  This Christmas Village is made entirely out of gingerbread and decorated with royal icing and sprinkles. This is the first gingerbread house & sleigh I've ever made.  I usually love to bake gingerbread men for Christmas.  But for this collaboration, I wanted a challenge.  So, I decided to design, make and decorate this Christmas Village. Please check out my Instagram post and also see what amazing creations the other bakers have made for this theme too. If you would like to make a Christmas Village too, I have included the recipe below.  I us

Gingerbread Men

Image
One of my favourite Christmas bakes that I look forward to has to be baking Gingerbread Men. These gingerbread men are so cute and fun to make.  They are the traditional gingerbread cookies that are loved by all at Christmas time. Last Christmas I baked gingerbread men holding mini candy canes and everyone loved them and so this year I had to bake them again and share them with you all. This is a great recipe and you can decorate the gingerbread men anyway you like, using royal icing and adding some food colouring. But, if you only make the gingerbread men with the mini candy canes, you don't need to make a full batch of icing as you only need a very small amount for the eyes, mouth and to stick the candy canes onto the gingerbread man's body. Happy Baking xo Gingerbread Men Ingredients · 125 grams butter · ⅓ cup brown sugar · ½ cup golden syrup · 3 cups plain flour · 2 teaspoons ground ginger · 2 teaspoon

Pink Ombre Christmas Pavlova Tree

Image
I have always wanted to make a pavlova and this was the perfect opportunity to do so.  Not only is it Christmas but an Aussie Christmas always needs a pavlova. I decided to enter the Queen's Fine Food's competition #QueenGoodEnough. I saw a Pink Ombre Pavlova on their website and thought I needed to make one. Instead of it being a round pavlova, I decided to turn it into a Christmas Tree for the festive season. This Pink Ombre Christmas Pavlova Tree is delicious.  It's filled with whipped cream between each layer and topped with fresh strawberries and meringue kisses. I had so much fun making this pavlova and it tasted amazing. I only wish that you could smell the strawberry and cream scent while the pavlova Christmas trees were baking.  I just wanted to eat them.  I would definitely recommend this delicious recipe and Queen's awesome products. Christmas Meringues

Image
If you are looking for something fun and easy to make for Christmas, this meringue recipe is for you.  They are a light, airy and fluffy goodness that just melts-in-your mouth. They also make a cute gift for your family and friends. I decided to make some Christmas wreaths with and without bows, small star meringues and Christmas trees.  I coloured the meringues in three different colours.  I went for the traditional green for the Christmas wreaths with red bows.  But for the wreath without the bows, I decided to use pink and add pink and silver sprinkles.  I also made some small pink star meringues and a few green Christmas trees with colourful sprinkles. You can add any colour you like to the meringues.  It was a lot of fun making these different meringues for Christmas.  Hope you will give this recipe a try too. Happy Baking xo Christmas Meringues  Ingredients · 3 egg whites · 150 grams caster sugar · Pinch of cream of tartar · 1 teaspoon van

Christmas Wreath Cookies

Image
Christmas is so much prettier with a touch of Tiffany Blue.  I wanted to make Christmas wreath cookies this year and so I couldn't help myself but add a touch of blue to it. These cookies are so fun to make and decorate.  You can make the wreath in any colour you like and add different coloured sprinkles.  I piped a simple bow at the top but you could make a fondant bow or even a star to add to the wreath. I piped small rosettes around the cookie to create the wreath but you could pipe small stars instead.  Another fun idea would be to could cut out the centre of the cookies before baking them to make them look like proper wreath.  I added shredded coconut to the centre of these cookies instead of cutting the centre out. Happy Baking xo Christmas Wreath Cookies  Ingredients · 1 cup plain flour · ¼ cup rice flour · ¼ cup caster sugar · 100 grams unsalted butter · 2 tablespoons milk Icing · 2 cups icing sugar ·
