Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Mini Unicorn Gingerbread Houses

I'm excited to be taking part again this year with #25daysofcollabs on Instagram with some amazing bakers to celebrate this festive season.  Each day since the start of December, different bakers have been involved in creating a bake from different themes. This year I've picked three themes to be part of.  The final theme is - Gingerbread Houses.  Last year I had so much fun making my first gingerbread house, so I decided to make another one this year.  I decided to make mini gingerbread houses that can sit on the side of mugs.  I didn't want to make the traditional houses so I turned them into unicorns. These Mini Unicorn Gingerbread Houses are so cute and fun to decorate.  They make great gifts for any unicorn or gingerbread lover.  They are decorated with royal icing and sprinkles to make them festive for Christmas. Christmas Gingerbread Wreath

I'm excited to be taking part again this year with #25daysofcollabs on Instagram with some amazing bakers to celebrate this festive season.  Each day since the start of December, different bakers have been involved in creating a bake from different themes. This year I've picked three themes to be part of.  The second theme is - Christmas Wreaths.  I had a few ideas in mind for this theme but I decided to create a gingerbread wreath for it.  It was fun making all the different snowflakes cookies and decorating it before putting it together on the wreath. This Christmas Gingerbread Wreath is made of various sized gingerbread snowflake cookies and decorated with royal icing.  It's a fun bake and the best part is you can eat the whole thing.  This gingerbread wreath makes a great decoration piece for Christmas or as a gift. Christmas Candy Cane Cake

This year I've picked three themes to be part of.  Kicking off with this first theme - Christmas Candy.  When thinking about Christmas candy the first thing that comes to mind would be the famous candy canes. This Christmas Candy Cane Cake is made of a moist chocolate cake with Swiss meringue buttercream in between the layers.  The whole cake is covered in the smooth Swiss meringue buttercream and decorated with crushed candy canes, candy canes, sprinkles and a mini gingerbread man. Chocolate Drip Birthday Cake

This cake was a special bake for a beautiful girl who turned fifteen.  She wanted a cake that was chocolate or maybe vanilla. I decided to combine both together and make a marbled cake with different elements of chocolate throughout the cake. This Chocolate Drip Birthday Cake is made of a delicious vanilla marbled cake and filled with a smooth chocolate Swiss meringue buttercream in between the layers.  It's covered in Swiss meringue buttercream and decorated with a chocolate drip, chocolate pieces in the middle of the cake and sprinkles of course. This cake was fun to make as you can add any of your favourite chocolates as decoration in the middle of the cake. Sprinkle Christmas Cake

This cake is a special bake for my beautiful friend Sasha @sashacakeschicago  I was so sad to hear that her Instagram account was hacked and deleted recently.  As the Instagram community is amazing, we have come together and dedicated a bake to Sasha to help her rebuild her account back up. Be sure to head over and give her account a follow as her bakes are inspirational and she is so beautiful, sweet and supportive. This cake was inspired by Sasha's technique of carving out part of the cake and adding sprinkles.  I had fun trying out this technique but adding the sprinkles was not as easy as it looks. This Sprinkle Christmas Cake is made of a moist coconut cake with smooth Swiss meringue buttercream in between each layer.  The carved Christmas tree is decorated with sprinkles and the cake is dusted with icing sugar to create a snow effect. Vintage Christmas Cake

I was so excited to be taking part in this super fun Vintage Christmas Cake collaboration on Instagram hosted by the sweet and talented Staci @stacibakesalot  Be sure to check out all the amazing bakes from everyone #vintagechristmascakecollab When I think of Vintage Christmas, I always think of a cute red car with a Christmas tree on top. This collaboration gave me the opportunity to create something I've never tried.   I'm so happy with how the cake come together.  Boy, was it challenging trying to create what I imagined and put it into cake form. This cute Vintage Christmas Cake is made of a moist coconut cake with smooth Swiss meringue buttercream in between each layer.  The design is piped using more delicious Swiss meringue buttercream and finally decorated with some sprinkles. Cactus Meringue Christmas Tree

I recently made this Cactus Meringue Christmas Tree using @queenfinefoods Meringue and Pavlova Powder Mix. This product was super easy to use and the meringues come out perfect. When I say it's super easy to use, all you have to do is add water to the powder mix and beat on high for 10 minutes and pipe out the meringues or pavlova and bake. This Cactus Meringue Christmas Tree is super easy and fun to make.  There are four layers of delicious meringue and cream in between.  It's decorated with cute sprinkles and meringue rosettes.
