Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Moist Vanilla Cupcakes

I wanted to try out a new cupcake recipe and since my two nephews were having birthday parties, it was the perfect opportunity to make some cupcakes. These Vanilla Cupcakes were light, moist and fluffy. They were decorated with a simple delicious American buttercream and topped with some cute sprinkles. This recipe makes 48 mini cupcakes or 24 regular sized cupcakes.  I prefer to make mini cupcakes as it's easier to eat as sometimes, a full sized cupcake is too much to eat at a party when there's always other delicious foods to eat. White Chocolate Cakesicles

Cakesicles were so fun to make that I also covered them in white chocolate and sprinkles. These White Chocolate Cakesicles are made of yummy cake covered with a white chocolate coat and sprinkles.  They are cute to make for birthday parties, baby showers or graduations. I recently also purchased the ice-cream moulds on ebay and am now patiently waiting for their delivery.  I can't wait to experiment with different flavours and more sprinkles of course. Chocolate Melting Moments

I have wanted to make Chocolate Melting Moments for awhile now, and since it was Easter, I thought I would make them in the shape of eggs for a bit of fun. These Chocolate Melting Moments are chocolate flavoured and are filled with a delicious strawberry buttercream.  I also added some pink sugar sprinkles to the side of the eggs to make them look pretty. I really enjoyed making these in the shape of Easter eggs.  The extra time needed to shape them was worth it as they look so cute. These Meringue Nests are an easy and fun Easter bake that will be enjoyed by everyone. If you don't have much time to bake but want to make a delicious treat, these meringue nests are perfect not only for Easter but anytime.  You can add fresh berries instead of Easter eggs.  As for the filling there are so many to chose from.  You can add the classic whipped cream, chocolate ganache, buttercream or my favourite, lemon curd. Springtime Macarons

I wanted to share an easy and fun way to dress up your macarons for Easter.  Adding sprinkles to macarons before baking only works with the lighter sprinkles as the heavier ones can sink when baked.   These Springtime Macarons are fun to make. All you need to do is drizzle white chocolate over the macaron shells and add sprinkles to make them look pretty.  The filling is super easy too.  Add crushed Oreos to some Nutella and you have your delicious filling for the macarons. Easter Baby Chick Macarons

With Easter just around the corner, I thought I would make some baby chick macarons. These Easter Baby Chick Macarons are so cute and fun to make.  Especially adding the features using melted chocolate and some royal icing. I used royal icing which I had leftover from another bake.  Below is a simple icing mixture that does not require egg whites but if you wanted to you could make the royal icing (refer to the Donut recipe) These chick macarons are filled with a delicious white chocolate ganache and they also make an adorable gift for family and friends. Bunny Cookies

On a recent grocery shop this week, I purchased some cute Easter cookie cutters at @colesmarkets.  I knew I had to use the adorable bunny cookie cutter in one of my bakes. There was also another ingredient I wanted to try in this bake.  I used CSR sugar's unrefined coconut sugar instead of regular sugar.  This type of sugar retains the nutrients naturally found in the nectar of coconut blossoms making it a healthier option in baking. These Bunny Cookies taste a little bit like a gingerbread cookie due to the unique flavour of the coconut sugar.  These cookies are easy to make and do not need any chilling time in the fridge. The smell of the cookies were so good when they come out of the oven. I hope you get a chance to try some coconut sugar in your baking soon.
