Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Valentine's Day is just around the corner and I thought, what could I make that is delicious and quick to bake as a sweet treat? I came up with these Monster Choc Chip Cookies in the shape of hearts.  These cookies are so easy and quick to make. Love Heart Cookie Cake

I'm so excited to be part of the #valentinescollab2019 on Instagram with a huge number of amazing bakers.  For this theme everyone will be baking and creating something related to Valentines. I decided to bake this cute three-tier cake made from cookies.  This Love Heart Cookie Cake is made from rich chocolate cookies stacked on top of each other and layered with delicious strawberry buttercream.  The richness of the chocolate cookies goes so well with the strawberry buttercream. Vanilla Slice Cake

Vanilla slice is one of my favourite desserts. Whenever I visit a country town, I always go the local bakery and try out their vanilla slice. I decided to enter Queen's Fine Food's competition #queenvanillaslice I made a cute mini Valentine's Day Vanilla Slice Cake filled with creamy custard between flaky puff pastry and topped it with sprinkles,along with some puff pastry hearts covered with chocolate ganache and sprinkles. I've only ever made vanilla slice once, many years ago and remembered that the pastry and custard layers made was not great.  But this time, I used Queen's Classic Vanilla Slice recipe and it turned out so good.  The custard was super creamy and delicious.  The pastry was crispy and flaky as I used Queen's tip to bake the pastry. It's not too early to bake Valentine's Day cookies right?  I wanted to share some fun and easy cookie ideas you could make for your loved ones. I was planning to make love heart cookies but didn't check first that I had the correct heart cookie cutters in my collection.  I did have a few heart cookie cutters but of course they were not the correct size ones I needed.  But not to worry, I created these cute cookies instead. These cute Coconut Heart Cookies are easy and fun to make for Valentine's Day.  They have a hint of coconut, a sweet jam centre, drizzled with chocolate and added sprinkles of course. Baked Cinnamon Donuts

I recently purchased a donut tin and couldn't wait to try my hand at baked donuts.  I thought I would start off by making these traditional cinnamon donuts. These Baked Cinnamon Donuts are so easy to make.  They are light and fluffy and deliciously covered with cinnamon sugar.  You can also consider them healthier as they are not deep fried. I'm hoping to bake some flavoured iced donuts soon.  So in the mean time, enjoy these puffs of cinnamon and sugar. Vanilla Cupcakes

At Christmas time on Instagram, the @csrsugar had a wonderful twelve days of Christmas giveaway.  I was one of the lucky winners. I won the first three days of prizes.  It included some buttercream icing mixes, specialty sugars and a gorgeous 'In The Forest' mug from Mason Cash. I have been wanting to try out the All Natural Buttercream Icing Mix and so I made these delicious vanilla cupcakes.  The CSR buttercream icing was super easy to make.  It produced a light and fluffy  buttercream perfect for frosting cupcakes. These vanilla cupcakes are ideal as the base for adding your favourite frosting on top.  They are easy to make and light in texture.  I also added some fun to the cupcakes by using @droetkerbakingaunz Midnight Magic sprinkles which looked gorgeous on the cupcakes.
