Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. Baked Chocolate Donuts

I wanted to make baked glazed donuts and thought, since Valentine's Day is just around the corner, why not make Baked Chocolate Donuts.

You can't have Valentine's without chocolate right?  If you're looking for something fun to make and give as a cute gift, try making these cute chocolate glazed donuts.

These baked chocolate donuts are easy and quick to make. They only take 8 minutes to bake and you get to enjoy delicious chocolate glazed donuts with sprinkles. These donuts are moist and full of chocolate flavour.

Chocolate Baked Donuts

Ingredients

· 115 grams butter, melted
· ½ cup milk
· ¼ cup coffee
· 1 egg
· ½ teaspoon vanilla extract
· ½ teaspoon white vinegar
· 1¼ cups plain flour
· ½ cup caster sugar
· ½ teaspoon baking soda
· ½ teaspoon salt
· ½ cup cocoa powder

Chocolate glaze

· 1 cup icing sugar
· 1½ tablespoon cocoa powder
· Pinch of salt
· 2 tablespoons milk
· 1 teaspoon vanilla essence

Instructions

1. Preheat oven to 180°C.

2. Spray donut tin with oil spray.

3. In a bowl combine the flour, sugar, baking soda, salt and cocoa powder.

4. In a separate large bowl, whisk together the melted butter, milk, coffee, egg, white vinegar and vanilla extract.

5. Gradually add the wet ingredients to the dry ingredients bowl. Mixing until no lumps and the mixture is smooth.

6. Fill a piping bag with the donut batter and pipe mixture into the donut holes about ¾ full.

7. Bake donuts for 8 minutes. Cool in tin for 5 minutes before transferring it to cooling rack.

Chocolate glaze

8. Mix icing sugar, salt, vanilla essence and milk into a bowl until a thick consistency is achieved.

9. Dip donuts into the chocolate glaze and shake the excess icing off and place donut onto a cooling rack and add sprinkles.

Tips

· Melt butter and make the coffee first so they can cool down while you measure out the rest of the ingredients for the donut batter.

· Dip about 4 donuts and then decorate so the icing doesn’t dry before you can add the sprinkles.
