Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Tim Tam Cake

This was a special bake for my cousin Tam.  It was her birthday recently, so I decided to make her a cake using one of Australia's favourite biscuit, the Tim Tam. I got the idea after her sister sent her a picture of a cake called the Tam Tam cake which I thought might have been a typo and should have said the Tim Tam cake. Tim Tam is a biscuit consisting of two malt biscuits with a chocolate cream filling and finally coated in a layer of chocolate.  It's made by Arnott's, an Australian biscuit company.  Tim Tam are super delicious. This Tim Tam cake is made of four layers of super moist chocolate cake.  The layers are covered with crushed Tim Tam biscuits and chocolate ganache frosting.  It is finally decorated with a smooth chocolate Swiss meringue buttercream and decorated with sprinkles and crushed Tim Tam biscuits. Chocolate Drip Cake

This was a special bake for an 85th Birthday celebration.  I must be honest, I found it hard to create a cake that was not pink or girly like. I'm pretty pleased with the way the cake turned out but I did have problems along the way.  Initially, I thought I would decorate the cake to look like the classic white birthday cake.  However, after adding a little drop of purple along with the white food gel, I felt that it looked a little grey rather than white.  The little touch of purple food gel was supposed to hide the yellow tint of the buttercream.  In the end, I decided to add sky blue food gel instead. This Chocolate Drip Cake is made of a super moist chocolate cake with delicious chocolate ganache frosting in between the layers.  It is finally decorated with a chocolate drip, Swiss meringue buttercream swirls and sprinkles. Blue Sky Cake

I was lucky enough to win a competition a few months back by Arika @mypaperkitchn over on Instagram.  Arika is a very talented artist who brings to life baked creations in her drawings. I was excited to be able to do this collaboration with her.  I decided to create this Blue Sky Cake for her to draw and her finished drawing is amazing.  Be sure to check out her account. Purple Rose Cake

I made this cake as part of a very special collaboration with a group of fun bakers over on Instagram. It's to celebrate Louise's birthday and her love for the colour purple. Sprinkle Cakesicles

I've had so fun making cakesicles with my ice-cream moulds.  However, I have not mastered the skill of coating them perfectly using the dipping method. So, I decided to try a new technique of covering the cakesicles with chocolate.  This method involves coating the ice-cream moulds and then add the cake mixture and then more chocolate. I found this method to be more successful in creating a smoother and more perfect looking cakesicle. Unfortunately, when I was doing this, it was at night and the pictures were not great. Oreo Cake

I made this Oreo cake as a special celebration for my 100th post on Instagram.  I can't believe that I have posted that many times on my feed. I decided to make this Oreo cake because I wanted to make a cake that I could eat and enjoy.  Most of the cakes that I had made previously was for someone's birthday or for a collaboration, and I normally gave them away. I also wanted to try creating a drip on this cake.  Drips can be tricky to do if the consistency is not correct.  I was really rapped with the way the chocolate drip turned out. This Oreo Cake is made of a moist vanilla cake and is loaded with crushed Oreo throughout the cake. Each cake layer is filled with a delicious Swiss meringue buttercream and chocolate ganache.  The cake is finally covered with a yummy Oreo Swiss meringue buttercream and decorated with swirls and Strawberry Oreos and sprinkles in the centre of the cake. Chocolate Swirl Cake

I was excited to make this chocolate swirl cake for a sweet girl who was turning fifteen.  She requested this type of cake.  I haven't made a marble cake in forever, so it was nice to make it. I was really happy with this recipe as the cakes come out pretty much with flat tops.  Making it perfect for icing and decorating.  But this means no leftover cake to make cakesicles or cake pops. First time making chocolate Swiss meringue buttercream and it's so delicious and smooth. This Chocolate Swirl Cake is moist and has a delicious chocolate swirl throughout the vanilla cake.  The chocolate swirl is made of chocolate not cocoa powder, making more decadent.  Not only is it covered in delicious chocolate Swiss meringue buttercream between the layers but the whole cake is decorated with this smooth buttercream and finally decorated with sprinkles. Ps. I did make a topper and a chocolate birthday sign for the cake but didn't have time to take pictures...

Buttercream Drip Cake

This Buttercream Drip cake is made for a super special Mother's Day collaboration over on Instagram, organised by the beautiful Sasha @ohlalaboulangerie and Joana @sweets_by_joana Be sure to check out #GlobalMothersDay2019 and #DulceDiaDeLaMadre2019 for all the wonderful creations from bakers over all the world in celebration for Mother's Day. I decided to try out this beautiful buttercream drip technique that was done by my beautiful friend Lindsay @staysweetnyc I absolutely love the way it turned out.  It was so fun piping all the rosettes and using the various piping tips. I really enjoyed mixing the different coloured buttercream.  I was like a kid in a candy store seeing all the beautiful buttercream colours. This Buttercream Drip cake is made of moist chocolate cake layers.  Not only is it covered in delicious Swiss meringue buttercream between the layers but the whole cake is decorated with this smooth buttercream using different piping tips. Pink Fault Line Cake

When the lovely Teresa @little_poppy_cake organised a #pinkcakecollab over on Instragram, I couldn't help but take part.  You all know that I love a touch of pink in my baking. This was also a great opportunity for me to try out a new cake technique that is currently trending.  I couldn't find a name for this technique.  Basically, there is a cracked section which you can leave exposed or add some sprinkles to it. I also decided to make Swiss meringue buttercream and boy is it so good.  This style of buttercream is so smooth and not as sweet as the traditional American buttercream.  It takes a bit more effort but it's so worth it. This Pink Fault Line Cake is made with super moist chocolate cake. The cake layers are filled with delicious Swiss meringue buttercream.
