Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Sprinkle Cakesicles

I've had so fun making cakesicles with my ice-cream moulds.  However, I have not mastered the skill of coating them perfectly using the dipping method.

So, I decided to try a new technique of covering the cakesicles with chocolate.  This method involves coating the ice-cream moulds and then add the cake mixture and then more chocolate.

I found this method to be more successful in creating a smoother and more perfect looking cakesicle. Unfortunately, when I was doing this, it was at night and the pictures were not great.

These Sprinkle Cakesicles are made of yummy chocolate cake covered with a dark chocolate or white chocolate coat and sprinkles.  They are fun and easy to make and a great way to use up leftover cake.

Sprinkle Cakesicles

Ingredients

Cake layer

· Crumb of one chocolate cake, 12 chocolate cupcakes or left over cake.
· 150 grams dark chocolate
· ½ cup dark choc chips
· Ice-cream sticks

Chocolate layer

· 200 grams dark chocolate
· 200 grams white chocolate
· Sprinkles – sugar strands (Queen fine foods)

* Special equipment – ice-cream moulds

Instructions

1. Place cake into a large bowl and using your hands break up the cake until it looks like crumbs.

2. Add melted dark chocolate a little at a time and combine it with your hands until cake crumb holds together and resembles play doh.

3. Add the dark choc chips and mix well.

4. Melt chocolate and coat the ice-cream moulds and place ice-cream sticks slightly in. Place moulds into the freezer for a few minutes for the chocolate to set.

5. Press cake mixture into each mould and push the ice-cream sticks in place and cover it with more melted chocolate.

6. Place the moulds into the freezer for the few minutes for the chocolate to set and remove from moulds.

7. Drizzle melted chocolate over the cakesicles and add sprinkles.

Tips

· I used left over chocolate cake from a previous bake.
· You can bake a cake, cupcakes or just purchase one from the store.
