Basque Cheesecake

  If you love cheesecakes, you definitely need to give this recipe a try. This Basque Cheesecake is so smooth and creamy and the best part is that it is easy to make. The worst part is having to wait for it to be refrigerated for 4 hours or overnight for the flavours to develop but the wait is so worth it. This recipe can be made using the oven or in the air fryer. I have made it both in the oven and in the air fryer. Mini Unicorn Gingerbread Houses

I'm excited to be taking part again this year with #25daysofcollabs on Instagram with some amazing bakers to celebrate this festive season.  Each day since the start of December, different bakers have been involved in creating a bake from different themes. This year I've picked three themes to be part of.  The final theme is - Gingerbread Houses.  Last year I had so much fun making my first gingerbread house, so I decided to make another one this year.  I decided to make mini gingerbread houses that can sit on the side of mugs.  I didn't want to make the traditional houses so I turned them into unicorns. These Mini Unicorn Gingerbread Houses are so cute and fun to decorate.  They make great gifts for any unicorn or gingerbread lover.  They are decorated with royal icing and sprinkles to make them festive for Christmas. Christmas Gingerbread Wreath

I'm excited to be taking part again this year with #25daysofcollabs on Instagram with some amazing bakers to celebrate this festive season.  Each day since the start of December, different bakers have been involved in creating a bake from different themes. This year I've picked three themes to be part of.  The second theme is - Christmas Wreaths.  I had a few ideas in mind for this theme but I decided to create a gingerbread wreath for it.  It was fun making all the different snowflakes cookies and decorating it before putting it together on the wreath. This Christmas Gingerbread Wreath is made of various sized gingerbread snowflake cookies and decorated with royal icing.  It's a fun bake and the best part is you can eat the whole thing.  This gingerbread wreath makes a great decoration piece for Christmas or as a gift. Christmas Gingerbread Village

I was so excited to be part of the #25daysofcollabs on Instagram with some amazing bakers to celebrate this festive season.  Each day starting from the 1st of December, different bakers have been involved in creating a bake from different themes. I picked the theme of a Christmas Village to be part of.  After searching and trying to come up with ideas on what to bake, I settled on a cute gingerbread sleigh with a village on top.  This Christmas Village is made entirely out of gingerbread and decorated with royal icing and sprinkles. This is the first gingerbread house & sleigh I've ever made.  I usually love to bake gingerbread men for Christmas.  But for this collaboration, I wanted a challenge.  So, I decided to design, make and decorate this Christmas Village. Gingerbread Men

One of my favourite Christmas bakes that I look forward to has to be baking Gingerbread Men. These gingerbread men are so cute and fun to make.  They are the traditional gingerbread cookies that are loved by all at Christmas time. Last Christmas I baked gingerbread men holding mini candy canes and everyone loved them and so this year I had to bake them again and share them with you all. This is a great recipe and you can decorate the gingerbread men anyway you like, using royal icing and adding some food colouring. But, if you only make the gingerbread men with the mini candy canes, you don't need to make a full batch of icing as you only need a very small amount for the eyes, mouth and to stick the candy canes onto the gingerbread man's body. Christmas Wreath Cookies

Christmas is so much prettier with a touch of Tiffany Blue.  I wanted to make Christmas wreath cookies this year and so I couldn't help myself but add a touch of blue to it. These cookies are so fun to make and decorate.  You can make the wreath in any colour you like and add different coloured sprinkles.  I piped a simple bow at the top but you could make a fondant bow or even a star to add to the wreath. I piped small rosettes around the cookie to create the wreath but you could pipe small stars instead.  Another fun idea would be to could cut out the centre of the cookies before baking them to make them look like proper wreath.  I added shredded coconut to the centre of these cookies instead of cutting the centre out. Festive Shortbread Cookies

I'm so excited about Christmas baking that I kind'a started a bit early this year. I know it's November but I thought I'd start sharing some recipes to inspire you to bake for Christmas. One of the things I always bake at Christmas time are shortbread cookies.  These festive shortbread cookies are so easy and fun to make.  But best of all they taste delicious as the cookies melt-in-your mouth. I love to drizzle melted chocolate and add sprinkles onto them.  There are so many different shaped cookie cutters you can use.  As usual, I love to make mini treats so I used a small star cutter.  This recipe makes lots of little cookies.  Or you can make quite a few large cookies instead.
