Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Creamy Lemon Bars

Creamy lemon bars is a recipe I've wanted to bake for awhile now and so today I baked them as I had some home-grown lemons from my uncle's garden.  He grows the best lemons.  I have a lemon tree but my tree doesn't have as many lemons as my uncle's tree. These lemon bars turned out so delicious and look just like a vanilla slice.  The lemon filling is full of tangy-ness and the base crumbles and melts in your mouth.  I really love this recipe and will be making it again when I get more lemons. I originally cut the lemon bars into squares but then I decided to cut them in half again.  The long rectangle bars are easier to pick up and eat.  Also, because they are so creamy and full of flavour, a whole square maybe too much to have in one go for me anyway. Mandarin Tart

Mandarins are in season at the moment and I kept thinking I should make a mandarin tart.  In my front garden the mandarins are still ripening.  I decided to use the mandarins from my garden as they are still a bit sour and would make a great tart. I used the same recipe I would for my lemon tart but using mandarins instead of lemons.  This recipe has quite a few steps but the end product is so worth making. I remember once using a commercial pastry to make mini tarts and the pastry tasted horrible.  I normally use commercial pastry for other baked goods and they turn out great but not for tarts. This pastry is easy to make and taste so good. If you have never made pastry from scratch for a tart this recipe is great to use.  Make sure you roll the pastry nice and thin. I must say that the mandarin tart turn out really well and tasted great.  However, personally it was a little bit sweet for me. I prefer the tangy-ness of a lemon tart. Happy Baking xo Mandarin T

Mini Cupcakes

Everytime I walk through the bakery section of the supermarket and I see the mini cupcakes with chocolate icing I think to myself, I should make some of these at home.  So I did and they were so fun and easy to make. This recipe is super easy.  All you need to do is just place all the ingredients into a bowl and use an electric mixer, and there you have the cupcake batter.  You can use this batter to make full size cupcakes or mini ones. The chocolate ganache icing is also easy to make and so delicious.  You might end up eating all the left over ganache icing with a spoon. This recipe is fun to make with little kids as an activity and they can decorate them with sprinkles, lollies, chocolate or anything sugary. Mini Banana Cakes with passionfruit cream cheese icing

I wanted to share one of my favourite banana cake recipes with you.  This recipe makes one large loaf of banana cake. However, I used this recipe to make mini banana cakes instead. These mini banana cakes, with a passionfruit cream cheese icing, are super delicious and moist.  The cream cheese icing is so good that I could just eat the icing.  Because the banana cakes are mini they take less than half the time it takes to bake a banana cake in a loaf.  This only means one good thing, you can eat it sooner. I like to pipe the passionfruit cream cheese icing with a piping bag but there is no need to do this.  A butter knife or pallet knife will do a great job.  This cream cheese icing recipe is a bit softer than buttercream icing but if you wanted to make it firmer just add less passionfruit pulp or more icing sugar. I also like to drizzle a little bit of passionfruit pulp over each mini banana cake to add a bit of zest to the icing and it also looks nice. Hope you try out this

Chocolate Brownie Cookies

A few years ago I was sitting in the waiting room at the doctors and come across this recipe for chocolate brownie cookies and have wanted to make them but never did.  While looking through my photo folders on my phone recently I came across the photo of the recipe I took.  So I decided to finally make them. These chocolate brownie cookies are so delicious and taste just like a chocolate brownie but in a cookie. It's hard to just eat one cookie because they are filled with a chocolate frosting as well. You could just eat the cookies without the frosting but they are extra good with the filling. There are a few steps in making the brownie cookies but they are worth making if you love brownies and cookies or chocolate in general.  Great recipe to try.
