Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Mini Banana Cakes with passionfruit cream cheese icing

I wanted to share one of my favourite banana cake recipes with you.  This recipe makes one large loaf of banana cake. However, I used this recipe to make mini banana cakes instead.

These mini banana cakes, with a passionfruit cream cheese icing, are super delicious and moist.  The cream cheese icing is so good that I could just eat the icing.  Because the banana cakes are mini they take less than half the time it takes to bake a banana cake in a loaf.  This only means one good thing, you can eat it sooner.

I like to pipe the passionfruit cream cheese icing with a piping bag but there is no need to do this.  A butter knife or pallet knife will do a great job.  This cream cheese icing recipe is a bit softer than buttercream icing but if you wanted to make it firmer just add less passionfruit pulp or more icing sugar.

I also like to drizzle a little bit of passionfruit pulp over each mini banana cake to add a bit of zest to the icing and it also looks nice.

Mini Banana Cakes with passionfruit cream cheese icing

Ingredients

· 125 grams butter, softened
· 1 ¼ cups brown sugar
· 1 teaspoon ground cinnamon
· 1 teaspoon vanilla extract
· 2 eggs
· 1 cup self-raising flour
· ½ cup plain flour
· ½ teaspoon bicarbonate of soda
· 3 large over-ripe mashed bananas
· ½ cup buttermilk, at room temperature

Passionfruit cream-cheese icing

· 125 grams cream cheese, softened
· 40 grams butter, softened
· 2 cup icing sugar, sifted
· 2 tablespoon passionfruit pulp

Instructions

1. Preheat oven to 180°C.

2. Spray with oil or place muffin patty cases into the muffin pan.

3. Use an electric mixer to beat the butter, sugar, cinnamon and vanilla in a bowl until pale and creamy. Add the eggs, one at a time, beating well after each addition.

4. Combine the plain flour and self raising flour in a separate
bowl. Add the flours, bicarbonate of soda, banana and buttermilk to the butter and egg mixture, in batches, stirring until just combined after each addition.

5. Spoon the mixture evenly into the prepared pans, smoothing the top with the back of a spoon.

6. Bake oven for 20-25 minutes or until a skewer inserted in the cakes comes out clean. Remove from oven and cool in pans for 5 minutes before turning onto a wire rack to cool completely.

Passionfruit Icing

Use an electric mixer to beat the cream cheese and butter in a bowl until smooth and creamy. Gradually add the icing sugar, in batches, beating well after each addition. Add the passionfruit pulp and beat until well combined.


Use a butter or pallet knife to spread the icing over the top of each cake. Or you can place the icing into a piping bag and pipe the icing over the mini cakes.

Tips

· Allow cakes to cool completely before icing with passionfruit cream cheese icing otherwise the icing will just melt.

· You can place this mixture into a loaf tin if you don’t want to make mini banana cakes.
