Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. This Raspberry Coconut Slice has a lovely cake-like base, with a delicious raspberry jam in the centre and a sweet fluffy coconut topping. Christmas Coconut Cupcakes

I wanted to use desiccated coconut to create the look of snow on cupcakes for Christmas. So, I decided to make some coconut cupcakes. These coconut cupcakes are light, fluffy and moist with a delicious coconut flavour.  To make it feel like Christmas, I made some Christmas trees using royal icing, chocolate sticks and sprinkles of course. These cupcakes are a fun idea and an easy bake for Christmas.  I would recommend that if you wanted to add the Christmas tree toppers that you make them the day before so the royal icing dries completely.  Otherwise the royal icing trees may break if not fully dried. These cute pink and white squares of goodness are a classic favourite treat for most children in Australia.  I remember having them as a child.  I loved the colour of it and the coconut flavour. Coconut ice is a no-bake treat which is super easy and fun to make.  They taste delicious with a sweet coconut flavour and you can't go wrong with a recipe that contains condensed milk.
