Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. I decided to make cupcakes for the cute chocolate cactus decorations I recently made. If you're looking for a fuss free cupcake recipe this is a great recipe as you place all ingredients into a bowl and mix. These Cactus Cupcakes are so fun to make and they look so pretty too.  They are made of a moist vanilla cake and iced with a deliciously sweet American buttercream.  Finally they are topped with a cute chocolate cactus and sprinkles. Chocolate Raspberry Cake

I'm super excited to be doing a collaboration with my beautiful and talented friend Jaina @cocoaandsilk over on Instagram. The idea for this collaboration was birthdays, and Jaina's birthday is first up on the 25th of March. We decided that we would make something birthday-related with the main focus on amazing flavours. Jaina is a big fan of chocolate, salted caramel, peanut butter, mint chocolate and raspberries.  So, I decided to make this Chocolate Raspberry Cake to celebrate her birthday. This Chocolate Raspberry Cake is super moist with a delicious raspberry compote between the layers and is covered in sweet buttercream.  It is also decorated with buttercream and sprinkles to give it the birthday cake feel to it.  I also used bright colours as Jaina is a big fan of colourful things. Mini Fairy Floss Cupcakes

I had a bucket of fairy floss and thought I would use it in my baking.  I made mini cupcakes and added some fairy floss to the top of each cupcake. These Mini Fairy Floss Cupcakes are not only cute but fun to make as a treat. I would like to share with you that adding fairy floss to cupcakes is not an easy task as the fairy floss stick together and forms a sugary ball when the heat of your hand touches it. Also, it's important to only add the fairy floss just before serving them as moisture 'melts' the fairy floss. The fairy floss sure looks delicious and definitely worth adding to the tops of cupcakes.  Have fun with the fairy floss and hopefully you don't end up eating most of it before they get to the cupcakes like I did. I have always wanted to share this Mini Mocha Cupcake recipe with you all and with Valentines just days away, I thought what a perfect time to share this recipe.  Most people I know love chocolate and coffee.  So these mocha cupcakes are a delicious combination of flavours. This has to be one of my favourite recipes and even kids love them, which surprised me. These Mini Mocha Cupcakes are super moist and full of chocolate flavour with a hint of coffee in both the cupcakes and mocha frosting.  I added some heart sprinkles for Valentines but normally I add a chocolate ball on top. Valentine's Day is just around the corner and I thought, what could I make that is delicious and quick to bake as a sweet treat? I came up with these Monster Choc Chip Cookies in the shape of hearts.  These cookies are so easy and quick to make. I decided to bake this cute three-tier cake made from cookies.  This Love Heart Cookie Cake is made from rich chocolate cookies stacked on top of each other and layered with delicious strawberry buttercream.  The richness of the chocolate cookies goes so well with the strawberry buttercream. Vanilla Cupcakes

At Christmas time on Instagram, the @csrsugar had a wonderful twelve days of Christmas giveaway.  I was one of the lucky winners. I won the first three days of prizes.  It included some buttercream icing mixes, specialty sugars and a gorgeous 'In The Forest' mug from Mason Cash. I have been wanting to try out the All Natural Buttercream Icing Mix and so I made these delicious vanilla cupcakes.  The CSR buttercream icing was super easy to make.  It produced a light and fluffy  buttercream perfect for frosting cupcakes. These vanilla cupcakes are ideal as the base for adding your favourite frosting on top.  They are easy to make and light in texture.  I also added some fun to the cupcakes by using @droetkerbakingaunz Midnight Magic sprinkles which looked gorgeous on the cupcakes. Christmas Coconut Cupcakes

I wanted to use desiccated coconut to create the look of snow on cupcakes for Christmas. So, I decided to make some coconut cupcakes. These coconut cupcakes are light, fluffy and moist with a delicious coconut flavour.  To make it feel like Christmas, I made some Christmas trees using royal icing, chocolate sticks and sprinkles of course. These cupcakes are a fun idea and an easy bake for Christmas.  I would recommend that if you wanted to add the Christmas tree toppers that you make them the day before so the royal icing dries completely.  Otherwise the royal icing trees may break if not fully dried.
