Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Love Heart Cookie Cake

I'm so excited to be part of the #valentinescollab2019 on Instagram with a huge number of amazing bakers.  For this theme everyone will be baking and creating something related to Valentines.

I decided to bake this cute three-tier cake made from cookies.  This Love Heart Cookie Cake is made from rich chocolate cookies stacked on top of each other and layered with delicious strawberry buttercream.  The richness of the chocolate cookies goes so well with the strawberry buttercream.

This cookie cake was so fun to make and decorate.  You have so many options when it comes to the type of buttercream and cookie flavours.  I decided to make chocolate cookies as you can't have Valentine's Day without some chocolate right?  The best thing about this cake is you can decorate it anyway you like.

You can add decorations purchased from the supermarket or cake decorating stores.  I decided to make royal icing drop flowers to decorate my cookie cake.  To make the drop flowers you need a batch of royal icing (medium consistency) and using Wilton 2D tip to pipe the flowers.  This is the second time making drop flowers for me and it was a lot of fun.

Love Heart Cookie Cake

Ingredients

· 1½ cup plain flour
· ¼ cup cocoa powder
· 1 cup caster sugar
· 200 grams unsalted butter
· Pinch of salt
· 1 egg

Buttercream Icing

· CSR All Natural Buttercream Icing Mix Strawberry 250gm

Instructions

1. Preheat oven to 180°C.

2. Line two trays with baking paper.

3. Place caster sugar and butter in a bowl and cream together.

4. Slowly add the lightly beaten egg and mix until combined. Add sifted flour, salt and cocoa powder and mix until just combined. Place dough in cling wrap and refrigerate for at least 30 minutes.

5. Place dough onto lightly floured bench and knead briefly. Roll dough to 3 mm thickness and cut out desired shape using a cookie cutter. Cut 4 of each size. Place onto a baking trays and chill again for about 30 minutes or until cool and firm.

6. Bake for 6–10 minutes or until the edges are golden brown.

7. Allow biscuits to cool completely before decorating.

Buttercream Icing

8. Make icing according to the pack.

9. Pipe or using a palette knife spread some buttercream between each layer of cookie. Stack the cookies so they look like a three-tier cake.

10. Add the desired decorations to the cookie cake.

Tips

· You can add sprinkles or make your own fondant flowers to add to your cookie cake. Otherwise, sugar flowers or decorations can be purchased at the supermarket or cake decorating stores.

· If you would like to make the drop flowers, just make a batch of royal icing. The recipe can be found in my donut cookie recipe.

· You need three different size cookie cutters to make this cookie cake.  The cutters can be of any shape.
