Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. I recently managed to get some fresh passionfruits at the market and had to make some mini cheesecakes with them.  I love the tangy-ness that fresh passionfruits have and the refreshing after taste.  I don't know about you but I also love the smell of fresh passionfruits. These Mini Passionfruit Cheesecakes are so easy and quick to make.  They have a lovely biscuit base with a delicious layer of cheesecake topped with some fresh passionfruit pulp.  They are great to make for parties or just because you love cheesecakes. Passionfruit Banana Cake

I was planning to do yet another Valentines bake when I had three very ripe bananas looking at me from the fruit bowl.  So, I decided to incorporate them into the bake and make a banana cake with passionfruit icing. This super moist banana cake, with passionfruit cream cheese icing, is so delicious and easy to make. I used my love heart tins to give it a Valentine's Day feel to it. I love using ingredients that are in season or available to me.  Using ripe bananas brings a natural sweetness to your bakes.  This cake was especially sweet and moist due to the ripe bananas. Meringue kisses have always been on my list of recipes to try and so finally I decided to make them.  I keep seeing gorgeous pictures of meringues on Pinterest and Instagram. I decided to start with just a basic meringue and added a delicious passionfruit cream in the centre.  I would love to experiment and make some in the future with bright colours.  But today, I thought lets start simple first.
