Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Monster Choc Chip Cookie

Valentine's Day is just around the corner and I thought, what could I make that is delicious and quick to bake as a sweet treat?

I came up with these Monster Choc Chip Cookies in the shape of hearts.  These cookies are so easy and quick to make. They are full of choc chips and cookie goodness.  They look cute and are decorated with a delicious chocolate buttercream and sprinkles.  

These heart cookies are perfect for Valentines or just to enjoy.

Monster Choc Chip Cookie

Ingredients

· 1¼ cup plain flour
· ¼ teaspoon baking soda
· Pinch of salt
· ½ cup brown sugar
· ¼ cup caster sugar
· 120 grams butter
· 1 teaspoon vanilla extract
· 1 egg
· ¾ cup choc chips

Decorations 

· CSR All Natural Buttercream Icing Mix Chocolate 250gm
· Sprinkles

Instructions

1. Preheat oven to 180°C.

2. Spray with oil or grease with butter, two love-heart cake tins.

3. Combine flour, baking soda and salt in a bowl and set aside.

4. Cream butter using an electric beater and then add brown sugar and caster sugar. Mix until a grainy paste forms.

5. Add the egg and vanilla extract and mix until light and fluffy.

6. Add flour mixture and choc chips and mix on low until just combined. Do not over mix.

7. Divide cookie dough into two even portions and press into the love heart cake tins.

8. Bake in oven for 30-35 minutes or until golden brown. Allow the cookies to cool completely in cake tins

Chocolate Frosting

9. Make icing according to the pack.

10. Place icing into a piping bag fitted with a Wilton 2D nozzle and pipe around the edge of the love heart cookie and add sprinkles.

Tips

· You can use a cake tin or pizza tray if you don’t have a love heart cake tin.

· I lined the bottom of the tins but there’s no need too. Just remember to spray them with oil or grease with butter.
