Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Gingerbread Men

One of my favourite Christmas bakes that I look forward to has to be baking Gingerbread Men.

These gingerbread men are so cute and fun to make.  They are the traditional gingerbread cookies that are loved by all at Christmas time.

Last Christmas I baked gingerbread men holding mini candy canes and everyone loved them and so this year I had to bake them again and share them with you all.

This is a great recipe and you can decorate the gingerbread men anyway you like, using royal icing and adding some food colouring.

But, if you only make the gingerbread men with the mini candy canes, you don't need to make a full batch of icing as you only need a very small amount for the eyes, mouth and to stick the candy canes onto the gingerbread man's body.

Gingerbread Men

Ingredients

· 125 grams butter
· ⅓ cup brown sugar
· ½ cup golden syrup
· 3 cups plain flour
· 2 teaspoons ground ginger
· 2 teaspoons ground cinnamon
· 2 teaspoons baking soda
· 1 egg
· 1 teaspoon vanilla extract

Royal Icing

· 2 cups icing sugar
· 1 egg white
· Water (approx 2-4 tablespoons)

Decorations

· Mini Candy Canes

Instructions

1. Preheat oven to 180°C.

2. Line two trays with baking paper.

3. Place butter, sugar and golden syrup in a microwave-safe bowl and microwave on high for minute, or until butter is melted. Set aside.

4. Sift the flour, spices and baking soda in a large bowl. Add the butter mixture, egg and vanilla extract, stir until combined.

5. Divide dough in half and roll dough to 5 mm thickness and using a gingerbread man cutter, cut out the shapes.

6. Place onto baking trays and bake for 10 minutes or until golden brown.

7. Allow cookies to cool completely before decorating.

Royal Icing/ Decorating

8. Place icing sugar, egg white and 1 tablespoon of water into a bowl and using an electric beater beat on high for 3 minutes until mixture is smooth. Add more water if the mixture is too thick.

9. Place royal icing into a piping bag and pipe a smiley face on each gingerbread man. At the back of each mini candy cane pipe a small amount of icing and attach it to the gingerbread man.

Tips

· Remember to allow cookies to cool completely before icing.

· If the icing appears too thick add more water and if the icing appears too runny add more icing sugar.
