I recently purchased a donut tin and couldn't wait to try my hand at baked donuts. I thought I would start off by making these traditional cinnamon donuts.
These Baked Cinnamon Donuts are so easy to make. They are light and fluffy and deliciously covered with cinnamon sugar. You can also consider them healthier as they are not deep fried.
I'm hoping to bake some flavoured iced donuts soon. So in the mean time, enjoy these puffs of cinnamon and sugar.

Baked Cinnamon Donuts
Ingredients
· 120 grams butter
· ⅓ cup caster sugar
· 1 teaspoon vanilla extract
· 3 eggs
· ½ teaspoon cinnamon
· 2 cups self-raising flour
· 1⅓ cup milk
Cinnamon Sugar
· 60 grams butter, softened
· ½ cup sugar
· ½ tablespoon cinnamon
Instructions
1. Preheat oven to 180°C.
2. Spray donut tin with oil spray.
3. In a bowl melt butter in the microwave, set aside to cool down.
4. In another bowl combine the sugar, cinnamon and flour.
5. In a separate large bowl, whisk together the eggs, vanilla extract, milk and the cooled down butter.
6. Gradually add the dry ingredients to the wet ingredients bowl, mixing until no lumps and the mixture is smooth.
7. Pipe or spoon mixture into the donut holes.
8. Bake donuts for 15-20 minutes or until lightly golden. Cool in tin for 5 minutes before transferring to a cooling rack.
Cinnamon Sugar
9. Melt the butter in the microwave and set aside to cool slightly before using.
10. In a snap lock bag place the sugar and cinnamon.
11. Brush the whole donut with melted butter and place into the sugar and cinnamon bag and shake it until the donut is covered completely with the cinnamon sugar. Repeat until all donuts are covered cinnamon sugar.
Tips
· You can also dunk the donut into the slightly cooled butter instead of brushing it before coating it with cinnamon sugar.
· You can fill the donut mixture to the top of the donut holes as they will fluff up when baked and will not over flow out of the tin.
· Donuts are best eaten within the day they were baked.
