Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. Apple & Raspberry Crumble

Are you looking for a cosy and homely type of dessert? This Apple and Raspberry Crumble is the recipe for you to try.  The great thing about this recipe is that you can substitute the apples or raspberries for any of your favourite fruit.

This Apple and Raspberry Crumble is not only easy to make but taste super delicious served straight from the oven with some ice-cream, custard, cream or simply on it own.  In every spoonful you get the taste of the soft apple slices, the tangy-ness  of the raspberries and the delicious crumble on top.

The added bonus is that you only use 3 tablespoons of brown sugar for this recipe. Alternatively you could reduce it even more.  This recipe is a family favourite and I hope it will be your family favourite too.

Apple & Raspberry Crumble

Ingredients

· 6 apples
· 1 cup raspberries (fresh or frozen)
· 5 tablespoons water
· 60 grams butter
· 1 teaspoon cinnamon
· ⅓ cup self-raising flour
· 3 tablespoons brown sugar
· 3 tablespoons desiccated coconut
· 3 tablespoons rolled oats

Instructions

1. Set oven to 190°C.

2. Peel and slice apples. Place into an oven-proof dish or small ramekins. Add raspberries randomly over the apple slices. Sprinkle cinnamon over apples and raspberries and add water.

3. To make the crumble rub butter into flour until mixture is crumbly. Mix in brown sugar, desiccated coconut and rolled oats. Sprinkle the crumble evenly over the apples and raspberries in the oven-proof dish.

4. Bake for 30 minutes or until the crumble is golden brown on top.

5. May be served with ice-cream, custard or cream.

Tips

· Leave butter in the refrigerator until you are ready to make the crumble so the butter isn’t too soft.
· Only use the tip of your fingers to rub the flour and butter together.
· Apples can be cut into slices or cubes.
· Other fruits can be added to the apple crumble for a different flavour.
· If you want super soft apples like the canned apples in tins, you can cook the sliced or cubed apple in a saucepan with some water and a little sugar until the apples are soft and then use it in the recipe.
