Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Mini Brownie Cheesecake Bites

Brownies are one of my favourite baked treats to have and in mini form, they are so yummy.  The other ingredient I also love is cream cheese frosting.  So these mini brownie cheesecake bites are the perfect combination of both.

These Mini Brownie Cheesecake Bites are so fudgy and delicious with the cream cheese filling that it's hard to just have one. The cream cheese filling goes so well with the chocolate fudge brownie.

They are so easy and quick to make as a sweet treat for any brownie lovers.

I found that not all the brownies were easy to remove from the mini cupcake tins, even though the tins were sprayed with oil.  I think next time I might try baking them with the cupcake liners.

Mini Brownie Cheesecake Bites

Ingredients

· 100 grams butter
· 150 grams dark chocolate
· 1 egg
· ¾ cup brown sugar
· ⅓ cup plain flour
· ¼ cup sour cream

Filling

· 125 grams cream cheese
· ½ teaspoon vanilla extract
· 2 tablespoons icing sugar

Instructions

1. Preheat oven to 180°C.

2. Spray with oil or place cupcake patty cases into mini cupcake tins.

3. In a bowl place softened cream cheese, icing sugar and vanilla extract. Mix until combined and set aside.

4. Place butter and chocolate in a heatproof bowl over a saucepan of simmering water (make sure the bowl does not touch the water). Stir until completely melted. Add brown sugar and combine well, set aside to cool slightly.

5. Add egg, sour cream and flour, mix well.

6. Place a small amount of brownie mixture in each cupcake hole. Add about half a teaspoon of the cream cheese filling on top and top it off with some more brownie mixture.

7. Bake in oven for 15 minutes. Allow the brownies to cool slightly and then using a sharp pointed knife to loosen the brownie from the tin.

Tips

· You can also bake this mixture in a brownie tin.
· Make sure the melted chocolate and butter mixture is not hot when you add the egg as you might cook the egg.
· Once you have the brownie mixture you can add walnuts, pecans, hazelnuts or chocolate chunks for a bit of added texture to the cooked brownie.
