Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Malteser Chocolate Cookies

If you love Maltesers, here is the ultimate cookie for you.  These cookies are not only chocolate but have delicious pieces of Maltesers and chocolate chips throughout them.  It's a chocolatey cookie for sure.

These Malteser Chocolate Cookies are full of chocolate flavour, starting with a chocolate-based cookie filled with Malteser pieces and dark chocolate chips.

I decided to make these Malteser Chocolate Cookies as I was given a few kilograms of this delicious malt chocolate balls.  I thought it would be a great way to enjoy this chocolate treat in a chocolate cookie with chocolate chips.

This recipe is easy and fun to make.

Malteser Chocolate Cookies

Ingredients

· 55 grams unsalted butter
· 60 grams dark chocolate
· ⅓ cup brown sugar
· ⅓ cup sugar
· 1 egg
· 1 teaspoon vanilla extract
· 2 tablespoons cocoa powder
· ¾ cup plain flour
· ¼ teaspoon baking powder
· ¼ teaspoon salt
· ½ cup dark chocolate chips
· 1 cup malt balls (Maltesers)

Instructions

1. Preheat oven to 180°C. Line trays with baking paper.

2. Melt butter and dark chocolate in a microwave-safe bowl and allow it to cool.

3. Add sugar, brown sugar, egg and vanilla extract and mix well.

4. Fold in sifted flour, cocoa powder, baking powder and salt, a third at a time. Mix until combined.

5. Add in the crushed malt balls and chocolate chips.

6. Place one tablespoonful of cookie dough onto the baking tray. Be sure to leave about 2cm between each cookie.

7. Bake in oven for 8-10 minutes. Allow the cookies to cool on baking trays.

Tips

· This recipe makes around 20 regular sized cookies.
