Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Apple Tea Cakes

I've been wanting to add this classic Tea Cake recipe to my collection.  They are so easy to make and you only need some basic ingredients.

I decided to make the tea cakes in a 12 mini loaf tin that I recently purchased.  However, you can make it in a round or square cake tin.

These mini Apple Tea Cakes are simply delicious and perfect for everyday.  They are not overly sweet, making it ideal to have with a cup of tea or coffee.  I added some apples on top but you can make it without it and just sprinkle some cinnamon and sugar on top.

Apple Tea Cakes

Ingredients

· 60 grams unsalted butter
· ½ cup caster sugar
· A pinch of salt
· 1 egg
· 1 cup self-raising flour
· ½ cup milk

Topping Mixture

· 1 apple, peeled & thinly sliced
· 1 teaspoon sugar
· ½ teaspoon nutmeg

Instructions

1. Preheat oven to 180°C. Spray with oil the 12 mini loaf tins or one round cake tin.

2. Place butter and sugar in a bowl and using an electric beater cream until pale and fluffy.

3. Add egg and milk and mix until smooth.

4. Fold in sifted flour and a pinch of salt, mix until combined.

5. Place mixture evenly amongst the mini loaf tins or place mixture into a cake tin.

6. Combine sugar and nutmeg in a small bowl.

7. Place a few thinly cut apple slices on top of each loaf or around the cake tin. Sprinkle the sugar and nutmeg mixture over the apple slices.

8. Bake in oven for 15-18 minutes for the mini loaves or bake for 30-45 minutes for the cake tin.

Tips

· A square or round cake tin will work for this recipe.
· Alternatively you don’t have to add the apples on top.
