Basque Cheesecake

  If you love cheesecakes, you definitely need to give this recipe a try. This Basque Cheesecake is so smooth and creamy and the best part is that it is easy to make. The worst part is having to wait for it to be refrigerated for 4 hours or overnight for the flavours to develop but the wait is so worth it. This recipe can be made using the oven or in the air fryer. I have made it both in the oven and in the air fryer. I often get a baking idea when I see produce that are in season or an ingredient that is on special.  I was at the local market and granny smith apples were on special for only 69 cent a kilo so what a great excuse to make Apple Crumble for a cold winter's day. This recipe is super easy.  I added a twist to the crumble by adding frozen mixed berries I had in the freezer.  You can use any varieties of apples or even pears are great. Raspberry Lemonade Muffins

I baked these delicious Raspberry Lemonade Muffins last week as I had some left over natural yoghurt and fresh lemons from my garden.  I love trying new recipes.  I used self-raising flour for this recipe as I didn't have enough plain flour. The muffins turned out light and fluffy with a hint of lemon.  The muffins were even better the next day.  You can pop the muffins in the microwave for a few seconds if you like your muffins warm.
