Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Apple Crumble


I often get a baking idea when I see produce that are in season or an ingredient that is on special.  I was at the local market and granny smith apples were on special for only 69 cent a kilo so what a great excuse to make Apple Crumble for a cold winter's day.

This recipe is super easy.  I added a twist to the crumble by adding frozen mixed berries I had in the freezer.  You can use any varieties of apples or even pears are great.

Apple Crumble 

Ingredients

· 6 apples
· 5 tablespoons water
· 60gm butter
· 1 teaspoon cinnamon
· ⅓ cup self-raising flour
· 3 tablespoons brown sugar
· 3 tablespoons desiccated coconut
· 3 tablespoons rolled oats

Instructions

1. Set oven to 190°C

2. Peel and slice apples. Place into an oven-proof dish or small ramekins. Sprinkle cinnamon over apples and add water.

3. To make the crumble, rub butter into flour until mixture is crumbly. Mix in brown sugar, coconut and rolled oats. Sprinkle the crumble
evenly over the apples in the oven-proof.

4. Bake for 30 minutes or until the crumble is
golden brown on top.

5. May be served with ice-cream, custard or cream.

Tips

·Leave butter in the refrigerator until you are ready to make the crumble so the butter isn’t too soft.

· Only use the tip of your fingers to rub the flour and butter together.

· Apples can be cut into slices or cubes.


· Other fruits can be added to the apple crumble for a new flavour. I added frozen mixed berries to this recipe.


· If you want super soft apples like the canned apples in tins, you can cook the sliced or cubed apple in a saucepan with some water and a little of sugar until the apples are soft and then use it in the recipe.
