Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Mango Pudding

I'm so excited that mangoes are coming into season.  I had to share this mango pudding recipe with you all.  These delicious mango puddings are so easy to make. They taste creamy and are full of mango flavour.

You can make these using frozen mangoes but fresh mangoes are best.  

I used some cute jelly moulds that I purchased a few years ago, which I have been wanting to try out. You can place the mango pudding into ramekins, jelly moulds or cups. These mango puddings are great to make for parties and they will surely be a hit.

Mango Pudding

Ingredients

· 3 medium mangoes
· 2 tablespoons gelatin
· 1 cup boiling water
· 400ml can of coconut milk
· 1 cup sugar

Instructions

1. Cut mangoes into cubes. Blend mangoes using a blender until smooth, set aside.

2. In a large bowl, place one cup of boiling water and dissolve the gelatin until no lumps remain.

3. Add in sugar and whisk until sugar has dissolved.

4. Stir in coconut milk and then mango puree until smooth.

5. Pour mango mixture into ramekins, jelly moulds or cups. Place into the refrigerator for about 2 to 3 hours until completed set.

Tips

· Pick ripe mangoes as they are sweeter and full of flavour.

· Mango pudding can be served with some evaporated milk poured over the top.

· Too make the mango pudding smother in texture, push the mixture through a sieve before placing it into the ramekins, jelly moulds or cups.
