Lemon Drizzle Cake

Calling all lemon lovers.  This Lemon Drizzle Cake is the perfect bake for anyone who loves lemon in desserts or cakes.  This cake uses the whole lemon.  The zest is used in the cake and the lemon juice is used to make the lemon sugar syrup and the lemon icing.  You will definitely enjoy the lemon flavour right throughout the whole cake. A slice of this Lemon Drizzle Cake is lovely for afternoon tea or just because you love a slice of cake packed with lemon flavour.  It's so easy to make and the perfect cake to share with others without it being too sweet. Choc Coffee Cookies

I've been craving and wanting to make some cookies lately as it seems like ages since I've baked cookies.

I decided to make cookies that are perfect to have for breakfast, afternoon tea or as an after-dinner dessert. 

These cookies are great in the morning for breakfast as they taste like you're having a coffee. In the afternoon, they make a good pick me up and for after-dinner they are delicious to have as dessert.

These Choc Coffee Cookies are deliciously soft, chewy and full of coffee and chocolate flavour.  They are perfect for coffee lovers who also love chocolate.

While baking these cookies, my kitchen sure smelt like a cafe with the coffee aroma in the air.

Choc Coffee Cookies

Ingredients

· 115 grams unsalted butter
· ¾ cup brown sugar
· 1 egg
· 1 teaspoon vanilla extract
· 1 tablespoon instant coffee powder
· ¼ cup cocoa powder
· 1 cup plain flour
· ½ teaspoon baking soda
· ¼ teaspoon salt
· 1 teaspoon cornflour
· 1 cup chocolate chips

Instructions

1. Preheat oven to 180°C. Line trays with baking paper.

2. Place butter and brown sugar in a bowl and using an electric beater beat until pale and creamy.

3. Add egg and vanilla extract and mix until smooth.

4. Fold in sifted flour, cocoa powder, cornflour, baking soda and salt, a third at a time. Add coffee powder and mix until combined.

5. Add in the chocolate chips.

6. Place one tablespoonful of cookie dough onto the baking tray. Making sure to leave about 2cm apart between each cookie.

7. Bake in oven for 10-12 minutes. Allow the cookies to cool on baking trays.

Tips

· Important to leave space between the cookies as they do spread out when baked.
· You can add two tablespoons of instant coffee powder depending on how strong you like your coffee cookies.
