Chocolate Toffee Cookies

I've been wanting to bake cookies with caramel pieces in them for awhile now.  I thought that toffee chews would be great to add to cookies.  Also, I've seen lots of cookies with sea salt flakes on them and want to add some to my cookies too.

I decided to make chocolate toffee cookies with a sprinkle of sea salt flakes.

These Chocolate Toffee Cookies were so delicious straight from the oven. The chocolate pieces were all melted and the toffee was gooey.  The cookies were crispy on the edges, soft in the middles and have a sprinkle of sea salt flakes to balance out the sweetness.

I would highly recommend placing the cookies into the microwave for a few seconds before eating so the toffee is soft.  However, they still taste delicious when the cookies are cool.  The toffee is then a little bit chewy.

This is a great recipe for toffee lovers.

Chocolate Toffee Cookies

Ingredients

· 225 grams unsalted butter
· 1 cup brown sugar
· ⅓ cup sugar
· 2 eggs
· 1 teaspoon vanilla extract
· 2 cups plain flour
· 1 teaspoon baking soda
· ¾ teaspoon salt
· 200 grams chocolate pieces
· 200 grams toffee chews (cut into small pieces)
· Sea salt flakes

Instructions

1. Preheat oven to 190°C. Line trays with baking paper.

2. Place butter into a saucepan over medium heat, stirring often until it foams and the butter starts to brown. This may take a few minutes. Remove from heat and place into a large bowl to cool slightly.

3. Using an electric beater on medium speed combine the brown sugar and sugar into the browned butter.

4. Add egg and vanilla extract and beat until mixture is light and begins to thicken.

5. Fold in sifted flour, baking soda and salt, until mixture is just combined.

6. Add in the chocolate and toffee pieces. Allow the dough to rest at room temperature for at least 30 minutes or more.

7. Place one tablespoonful of cookie dough onto the baking tray. Making sure to leave about 4cm apart between each cookie. Finally, sprinkle some sea salt flakes on each cookie.

8. Bake in oven for 10-12 minutes. Allow the cookies to cool on baking trays.

Tips

· Important to leave space between the cookies as they do spread out when baked.
· I used an ice-cream scoop to scoop the cookie mixture onto the trays.
· It’s important to cut the toffee chews into small pieces as you don’t want a large piece of toffee when you bite into the cookie.
