Basque Cheesecake

Image
If you love cheesecakes, you definitely need to give this recipe a try. This Basque Cheesecake is so smooth and creamy and the best part is that it is easy to make. The worst part is having to wait for it to be refrigerated for 4 hours or overnight for the flavours to develop but the wait is so worth it. This recipe can be made using the oven or in the air fryer. I have made it both in the oven and in the air fryer. Both methods create a delicious cheesecake that your family and friends will ask you to make time and time again.  Happy Baking xo Basque Cheesecake  Ingredients · 250 grams cream cheese ·  ½  cup sugar · 2 eggs · 1 tablespoon cornflour ·  ⅓  cup thickened cream ·  ½  teaspoon vanilla extract  ·  ¼  teaspoon salt (optional) Instructions 1. Preheat oven to 250°C.  2. Line a 6-inch round tin with baking paper. 3. In a mixing bowl, beat the cream cheese and sugar until smooth and creamy using a wooden spoon. 4. ...

Chocolate macarons have always been on my list of macaron flavours to try.  So, what a perfect opportunity to turn them into reindeers for a Christmas bake. These chocolate reindeer macarons are not only delicious with a chocolate ganache filling but fun to make for the festive season. You can simply just make chocolate macarons or dress them up as reindeers.  I used pretzel sticks for the antlers, mini choc chips for the eyes, white melted chocolate for the pupils and a red lolly for the nose. Christmas Coconut Cupcakes

Image
I wanted to use desiccated coconut to create the look of snow on cupcakes for Christmas. So, I decided to make some coconut cupcakes. These coconut cupcakes are light, fluffy and moist with a delicious coconut flavour.  To make it feel like Christmas, I made some Christmas trees using royal icing, chocolate sticks and sprinkles of course. These cupcakes are a fun idea and an easy bake for Christmas.  I would recommend that if you wanted to add the Christmas tree toppers that you make them the day before so the royal icing dries completely.  Otherwise the royal icing trees may break if not fully dried. Happy Baking xo Christmas Coconut Cupcakes Ingredients · 1 cup self-raising flour · ½ cup desiccated coconut · ½ cup caster sugar · 2 eggs · 160ml coconut milk · 125 grams butter, melted & cooled Coconut buttercream icing · 60 grams butter, room temperature · 1½ cups icing sugar · ...

Festive Shortbread Cookies

Image
I'm so excited about Christmas baking that I kind'a started a bit early this year. I know it's November but I thought I'd start sharing some recipes to inspire you to bake for Christmas. One of the things I always bake at Christmas time are shortbread cookies.  These festive shortbread cookies are so easy and fun to make.  But best of all they taste delicious as the cookies melt-in-your mouth. I love to drizzle melted chocolate and add sprinkles onto them.  There are so many different shaped cookie cutters you can use.  As usual, I love to make mini treats so I used a small star cutter.  This recipe makes lots of little cookies.  Or you can make quite a few large cookies instead. Happy Baking xo Festive Shortbread Cookies Ingredients · 250 grams butter, cubed · 1¾ cups plain flour · ⅔ cups rice flour · ⅔ caster sugar · Pinch of salt Decorations · Sprinkles · Dark or white chocolate Instruc...

I think I just found my new favourite chocolate cookie recipe. If you love my brownie cookie recipe, you definitely need to try this recipe.  It's so good. Unicorn Sugar Cookie Bars

Image
I was excited to bake these sugar cookie bars from @twosugarbugs.  These sugar cookie bars are easy to make.  They are very soft, covered with a delicious buttercream and lots of sprinkles on top. I decided to turn them into Unicorn Sugar Cookies Bars instead, so that I could try out some more of my Americolor food gels.  This is a great recipe for children's birthday parties or just as a treat.  If you wanted the more adult version, do not add colour gels to the buttercream. With the unicorn buttercream I got a bit excited when the pink and blue icing blended together to produce a beautiful purple, but I think I over-mixed when spreading it over the cookie sheet.  Next time I make it, I will try not to over mix the colours, so that more pink and blue icing are visible. The recipe below has been converted into Australian measurements and I also left out the almond essence as I didn't have any.  Please head over to twosugarbugs.com if you would like ...

Mini Mango Cheesecakes

Image
There are so many amazing bakers on Instagram.  I have so many favourite pages that I love following.  They are all inspiring and I love their baking creations.  One of my favourite's has to be @sugaretal.  Sonail Ghosh is an amazing photographer and baker.  If you haven't seen her page, you definitely need to go and have a look. I was inspired by one of her posts for mini cheesecakes.  I have always wanted to make them. I changed the recipe slightly.  I used Marie biscuits instead of digestive biscuits and I used pureed mangoes instead of peanut. These mini mango cheesecakes are so easy to make and taste delicious.  The mango flavour is divine. If you add some strawberries, blueberries and mango puree on top when decorating them, you will not be disappointed.  They taste amazing. Happy Baking xo Mini Mango Cheesecakes  Ingredients · 120 grams Marie biscuits · 50 grams unsalted butter, melted · ...
